French Onion Soup: caramelized onions, rich broth, garlic croutons and cheese… it’s gonna be good.

Onion soup for four;
6 yellow onions, peeled and sliced
¼ cup (55 g) butter
½ cup (125 ml) red wine + 50ml
4 cups (1 liter) chicken broth
4 cups (1 liter) beef broth
1 tbsp light toasted flour
1 tea nutmeg
Salt and pepper to your taste

Toppings;
1 cups (as much as you want) cheddar cheese, grated
8 slices baguette, about ½ inch (1 cm) thick, toasted
4 small garlic cloves, halved (go crazy)

  1. next time you can just toast the flour in the fat with the butter and onions before you add any liquid. let it go a nice brown colour and smell like pie crust. This will stop it from clumping and removes the unnecessary step of baking the flour.
