Breakfast can be so decadent! Tons of sugar and carbohydrates lurking in sauces and mixes. But what if you could enjoy a delicious breakfast that tastes like your high sugar favorites but is actually keto friendly? Let’s start with Cannoli Stuffed French Toast!
First up, Keto Eggloaf!!!
Eggloaf Ingredients:
6 eggs
6 oz cream cheese
4 T melted butter
1/4 t baking powder
2 t vanilla
pinch of cinnamon
Combine all ingredients in a blender & mix it until smooth (about a minute).
Spray your 9 x 13 pan with non-stick cooking spray and bake it at 350 degrees for 20 minutes.
Cool and cut Eggloaf into slices. Pan fry each slice in butter until golden brown.
Cannoli Filling:
4 oz mascarpone
1 t vanilla
sweetener to taste
pinch of cinnamon
dark chocolate chips
Soften mascarpone cheese slightly. Mix in the remaining ingredients until smooth.
Stack your eggloaf French Toast and fill each with a spoonful of cannoli filling. Top with garnish such as whipped cream, melted chocolate. chocolate chips or sugar free maple syrup and devour!
