Ratatouille Just Like the Movie – A Colorful & Flavorful Classic!
Ingredients:

For the Vegetables:

1 medium eggplant
1 green zucchini
1 yellow zucchini (or yellow squash)
1 green squash
Olive oil for drizzling
For the Sauce:

1 medium onion, finely chopped
2 garlic cloves, minced
1 shallot, finely chopped
1 carrot, diced
1 celery stalk, diced
1 cup tomato puree
Salt and pepper to taste
Fresh thyme and basil for garnish
Instructions:

Prepare the Sauce: In a pan, sauté onion, garlic, shallot, carrot, and celery in olive oil until soft. Stir in tomato puree, season with salt and pepper, and simmer for 10-15 minutes until thickened. Set aside.

Slice the Vegetables: Thinly slice the eggplant, zucchini, yellow zucchini, and green squash.

Assemble the Ratatouille: In a baking dish, spread a layer of the sauce at the bottom. Arrange the vegetable slices in a circular pattern, alternating each type of vegetable.

Drizzle & Bake: Drizzle olive oil over the top and season with salt, pepper, and fresh thyme. Cover with parchment paper and bake at 375°F (190°C) for 40-45 minutes, until vegetables are tender.

Serve: Garnish with fresh basil and enjoy this stunning, flavorful ratatouille straight out of the movie!
