Ingredients
· 4 large eggs (whisked)
· 1 tablespoon heavy whipping cream
· ½ teaspoon nutmeg, grated
· ½ tablespoon brown sugar
· 1 teaspoon pure vanilla extract
· ½ teaspoon ground cinnamon
· ¼ teaspoon ground clove
· ¼ tsp ground cardamom (optional)
· ½ tsp salt
· 4 slices challah or brioche bread ( ½-1 inch thick slices)
· 1 tablespoon oil
· 2 fresh bay leaves or dried
Bourbon Infused Toasted Coconut
· ½ cup fresh coconut, shredded
· 1 tablespoon brown sugar
· ½ tsp red rum or bourbon
· pure maple syrup
Method
Step 1: In a bowl, mix together the eggs, whipping cream, nutmeg, brown sugar, vanilla extract, cinnamon, ground cloves, cardamom (optional) and salt.
Step 2: Slice challah bread into ½-1 inch slices and set aside.
Step 3: Dip each challah slice in the egg mixture, turning to coat both sides evenly.
Step 4: Heat a skillet with oil to medium high heat and add the bay leaves. Allow the bay leaves to infuse in the oil for about 1 minute or until fragrant.
Step 5: Once infused, remove from the heat and add two of the soaked challah slices to the skillet. Cook for around 2 minutes or until both sides are golden brown. Repeat this step with the remaining egg-soaked challah slices.
Step 6: In a separate skillet on low heat, add freshly shredded coconut, brown sugar and bourbon/rum and toast until golden brown and crisp.
Step 7: Serve the french toast with pure maple syrup and top with toasted coconut and powdered sugar.
