Crispy, Cheesy Potato Bake Recipe:
Ingredients:
-4 medium-large potatoes.
-5 tbsp olive oil.
-3 tbsp Pecorino cheese.
-500g cheddar cheese, grated (divided).
-125g mozzarella ball, drained and finely chopped.
-Finely chopped parsley (for garnish).
-Salt (use sparingly) and black pepper.
How to Make French Fries Alternative Recipe:
1- Prepare the Potatoes:
-Wash the potatoes thoroughly, leaving the skin on.
-Using a mandoline matchstick cutter, cut the potatoes into thin matchstick-sized pieces.
-Rinse the potato matchsticks under cold water, then dry them thoroughly using a kitchen paper towel or clean tea towel.
2- Mix the Ingredients:
-In a large bowl, combine the dried potato matchsticks, olive oil, Pecorino cheese, 200g of grated cheddar cheese, a dash of salt (go easy due to the saltiness of the cheddar), and a generous amount of black pepper.
-Mix well until the potatoes are evenly coated.
3- Bake the Potatoes:
-Transfer the potato mixture to a nonstick baking tray (approximately 35x25x2 cm, but exact size isn’t crucial).
-Press down with your hands to ensure the entire tray is covered, and the top is evenly layered with the potato mixture.
-Bake in a preheated oven at 200°C (392°F) for 30-35 minutes, or until the top begins to brown.
4- Add the Cheese Topping:
-Remove the tray from the oven and sprinkle the mozzarella cheese evenly over the top, followed by the remaining cheddar cheese.
-Add a sprinkle of finely chopped parsley for garnish.
5- Finish Baking:
-Return the tray to the oven and bake for an additional 10-12 minutes, until the cheese topping is golden and bubbly.
6- Serve:
-Enjoy it hot, or allow it to cool and cut into squares.
-Serve as a snack, or pair with oven-baked drumsticks or slow-cooked chicken. For chicken recipes, check out my other videos here: https://www.youtube.com/shorts/D5pluz5SkFk
Note: Be cautious with the salt, as the cheddar cheese is already salty. You can always add more later if needed, but be generous with the black pepper for extra flavour!
