In a deep skillet, melt butter over medium-high heat. Add onions and cook for 20 minutes until soft and lightly brown, stirring often. Add salt, pepper, and thyme and continue to cook for 10 minutes, stirring often. Add garlic and continue to cook for 2 minutes minute. Add Orzo, white wine and red wine vinegar. Bring to a boil. Cook until almost all wine is evaporated, about 2 minutes. Add the beef broth and bring to a boil. Reduce heat and simmer until pasta is tender and broth is mostly absorbed, about 10-15 minutes. Add the shredded gruyere and mix until just melted. Remove from the heat and serve with steak.
