Chef Vivian, look around you, ethnic replacement is real.. Wouldn't you say that the French people are far too valuable to be removed from the future?

A great recipe, thank you.
If adding leek oil, do you use both the green and the white part of the leek? I usually don’t cook with the green part but want some color to my infused oil. Also I make curry pumpkin soup every year and last year I accidentally used rancid oil in it. I was so upset but I fed it to my friends and they loved it so much that they wanted to know the recipe and how I got it so earthy tasting. I just did not have it in me to tell them I used bad oil. So they will forever wonder why their soup does not taste like mine.
