Ingredients: – 2 boneless chicken breast fillets (half-breasts, depending on their size) – 50g softened butter, at room temperature – 3 cloves of garlic, minced or crushed – A bunch of fresh parsley – 1 green onion, finely chopped – Salt, pepper – 1 egg – Flour, breadcrumbs – Oil for frying
Start by preparing the garlic herb butter. In a bowl, mix the softened butter with garlic, salt, pepper, green onion and chopped parsley. Set the mixture aside. Next, take the chicken breasts and flatten them as you would for schnitzel. Season the meat and place a portion of the butter mixture in the center of each piece. Roll the chicken tightly, ensuring the butter is well enclosed. You can use toothpicks to secure the edges if needed. Prepare three plates: one with beaten eggs, one with flour, and the third with breadcrumbs. Heat the tallow or oil of choice in a pan. Dip the rolled chicken in the flour, then the egg, and finally coat it with breadcrumbs. Fry in the heated oil until the crust turns golden and crispy, ensuring all sides are evenly cooked.
