    Chartreuse tastes different from Absinthe. Both are strong and herbal, but Chartreuse has a more complex taste imo. You can thank Monks for this drink. It was used as a medicine for centuries. there are 3 types of Chartreuse : Yellow, Green and the Elixir (which is the original herbal remedy).
    Also about Hauts de France, they didn't talk about the Welsh :O It is a delicious cheese dish: beer soaked cheddar, covering a toast with mustard and either ham or bacon + an egg on top. And the fun thing is you customise it any way you want: use another cheese (like maroilles), add mushrooms or other fun things. Just talking about this dish makes me want to cook one.

  6. A boeuf bourguignon IS no fancy stuff. It's a Dish you could eat AT a French family's table on a thursday. It's easy to do, warm and nourishing

  8. They don't speak of the weather. Be careful with the Season and région when you visit. Not the same weather in the south and in the North.

  9. We're lucky because we have kind of a unique geographic situation in europe at leat. The landscapes, the climates, or the food influences are very different so each region of france are really different from each other. 🙂

  10. The white sauce on the flamanquiche is crème fraîche with salt and pepper just add bacon and oignon and cheese and voilà !

  12. The thing with french cuisine, like a lot of other aspect of french culture, it's that what was exported and what shines worldwide is going to be bourgeois/upper class haha. I mean it makes sens, the aristocratie have always dictated what's on trend, they would share it with neughboring other rich folks etc. But a lot of french culture is by the people, for the people ! Some of my favotire food, especially from childhood, is not "fancy" at all and considered paysant food basically. So don't get the fancy stuff if it isn't your thing, and go to small, old local restaurants that's like a french granma's cooking and I garantee a good time !!
