Sunday has become mine and my husband’s favorite day of the week. Sunday mornings, we go to the gym together, then grab lattes, hit up the farmers market and then come home to make a cozy recipe while football is on…. Except for this weekend, when the jet game was at 9:30 am. Our Sunday recipes are usually soups, stews or chilis… so we’re calling this series Andrews sunday soup series! We do one every fall. He’s making them and I’m just filming them!!
One-pot French onion soup Gluten free, dairy free
Ingredients: – 2 tbsp olive oil – 1-2 white onions, sliced thinly – ¾ cup white wine – 1 tbsp garlic, minced – 1 jar beef bone broth – 1 bay leaf – Salt + pepper
Directions: 1. Combine sliced onions and oil in a soup pot. Cook until onions are fully browned, approx 20-30 min on medium heat. 2. Once browned, add the garlic. Let the garlic sauté for 2-3 minutes. 3. Deglaze with white wine by adding in the wine, letting it soak up all the good stuff at the bottom then letting the wine cook out. This should take approx 5 minutes. 4. Next, add in the broth, bay leaf, salt and pepper. Cook on medium low for approx 30 minutes. (Remember to remove the bay leaf before serving) 5. I like to toast up a gluten free baguette with some cheese to dip in and serve on top. You can use dairy free cheese for a dairy free recipe.
