250 g of flour
180 g of water
50 g of sourdough (or 2.5g of yeast)
5 grams of salt
You won’t need much to make these homemade baguettes with all purpose flour, but a lot of patience and time
Steps:
– In a large bowl, add water, sourdough, flour and salt and mix (if you use dry yeast then add 5% more water)
– Knead the dough for 2 min with spatula
– Cover and refrigerate for 30 min
– After 30 min passed, proceed with the folding. Fold the dough underneath itself; turn the bowl 180° and do the other side. Turn the bowl 90° and repeat to fold all four sides. Repeat every 30 min until the dough is jiggly and strong (4-5 times)
– Cover and ferment in a warm place for 1 hour
– Transfer the dough to the fridge, and let it cold-proof overnight or at least 6 hours
– Shape the bread as desired, cover and let ferment for another 30-40min
– Cover again and refrigerate for 30 min
– Score the baguettes using a curved blade
Preheat oven 230°C
– Add water in a large bowl to create steam in the oven
– Bake 15 min with baking paper 230°C
– Then remove the paper and bake for another 15 min
