Chicken Nugget mix:
1 pound chicken breast
1 egg white
1 1/2 cup heavy cream
6 oz chopped mushrooms
2 large shallots
1 1/4 tsp kosher salt
1/2 tsp black pepper
Cider sauce:
2 apples peeled and cut into wedges with core removed (save the peels for sauce)
3/4 cup calvados or another apple brandy
2 cups apple cider
1 1/2 cups heavy cream
Salt to taste
Batter:
1 1/2 cups water 344 grams
1 1/3 cups ap flour 200 grams
1 tbsp baking powder 16 grams
1/3 cup corn starch 50 grams
3 tbsp avocado oil
Salt 1 1/4 tsp
1 whole egg

In all deference, because I do like your work, they are called 'Croquettes.' The French Chicky Nuggets. We made them for kids at a Bistro I worked at, with Fritte. Most kids ain't goin' for Moulle Fritte, Crepe de Mer or Veal Daub

I honestly don't understand the fascination with French cuisine. It's the worst, most bland, ghastly of all European cuisines.
Their patisserie is brilliant- but cuisine? Absolutely diabolical.
