*GOAT French Toast Recipe*
▪Challah bread, 8 slices, each 1 to 1 1/4 inches thick (sub with brioche or texas toast)
▪6 large eggs
▪120g (1/2c packed) brown sugar
▪5g (1t) vanilla extract
▪2g (1/2t) cinnamon
▪6g (1t) salt
▪2g (1/8t) nutmeg
▪450g (2c) half and half
▪Neutral oil
▪Butter (for cooking)
▪Maple syrup
▪Powdered sugar
▪Whipped butter (2g salt + 230g/2 sticks softened butter)
*Instructions:*
1. Slice the challah bread into 8 slices, each 1 to 1 1/4 inches thick.
2. Place the bread slices on a wire rack set over a baking sheet. Dry the bread in a 180°F (82°C) oven for 30 minutes, flipping halfway through. Alternatively, leave the bread out overnight to dry.
3. To make the custard, in a medium bowl, whisk together eggs, brown sugar, vanilla, cinnamon, salt, and a pinch of freshly grated nutmeg.
4. Once combined, add half and half and whisk until the mixture is smooth and homogeneous.
5. Pour half of the custard into a shallow baking dish or half-sheet tray to soak the bread
6. For challah: Place 2 slices of bread into the custard, soaking for 2 minutes on each side. The custard should be about ⅓ of the way up the sides of the bread
– For brioche: Soak each slice for 30 seconds per side.
– For Texas toast: Soak each slice for 1 minute per side.
7. Move soaked pieces to a plate once soaked while you get ready to cook the French toast
8. Heat a nonstick skillet over medium-low heat. Add a generous swirl of neutral oil followed by 1 tablespoon of butter.
9. Once the butter is melted and the pan is evenly coated, place the soaked bread slices in the pan. Cook for 4 minutes on the first side, moving the slices around occasionally to ensure even browning.
10. Flip the slices and cook for an additional 4 minutes on the second side, again moving them to avoid uneven browning.
11. To prepare the whipped butter, add softened butter and 2g salt to a stand mixer with the paddle 12. attachment and whip until butter is whipped into fluffy soft peaks
13. To serve, stack the cooked French toast slices on a plate. Top with a dollop of salted whipped butter and a generous drizzle of dark maple syrup. Optionally, dust with powdered sugar.

My husband, who believes the frozen French toast that comes in a box is the epitome of culinary perfection, just gobbled up three of these slices. I didn’t say anything so I wouldn’t spook him, but I’m pretty confident frozen will now be a thing of the past at our house 😂

Great video 🙂 As a French, I have never understood why it is named after my country, where to be honnest, it is not very well known/not often eaten (and called pain perdu, or lost bread, allowing to use remains of pain rassis to avoid throwing away leftovers of bread). I personnally saw this French toast concept when watching Kramer vs Kramer as a teenager.

Great, but burned.
You're wrong actually, because you didn't structure it in the Hong Kong style.
Instead of thick slices, start with three thin slices. It's good with Grocery Store white bread, though when I'm having a good day I do plan to do it with homemade brioche. You glue the slices together with butter or peanut butter before soaking in custard, then you deep fry the whole thing. I coat it with panko too.
Why's this better? Well, other than having a layered filling, it gives you the opportunity for the greatest innovation in french toast history: you cut a square out of the center of second slice in the stack, giving you a sealed inner cavity that can hold a filling, such as peanut butter, caramel sauce, whipped maple syrup, or marshmallow fluff. I did it with chopped slave-free chocolate mixed with mashed banana. In Hong Kong they would use salted egg yolk sauce. My mother requests raspberry jam mixed with cream cheese.

I've made this, it is top notch. I had long ago moved on from using Challah for French toast. Brian's way is THE way to use Challah! It is all about technique.
The nostalgia! Challah french toast was a Saturday morning tradition in my house growing up. It really is the best! Now I live in Japan and I imagine shokupan might give similar results to the Texas toast version…

Great video, as always ! I'm french, and you know certainly that french toast (Pain perdu = "lost bread" literraly) stands for the bread you left aside, and it turned dry so no need to put it in the oven.
That bread is still edible of course when you cook it like in the recipe. Brioche makes it better as it is now a recipe you make out of fresh ingredients, and not the bread you were about to lost.

We're big french toasters in my house and always on the hunt for the best FT bread. A couple of our favorites… At Costco, you can get this stuff called "croissant bread" in a two loaf package. It's excellent for both regular toast and french toast. And at our QFC grocery store (a Kroger brand store, so it may be available elsewhere), in the specialty breads section, there's a product called "French Toast Bread," which, as the name suggests, makes excellent french toast.

Old-ish guy here. Please refrain from using "sick"" as a slang term for "good." It doesn't work for a decent slice of the audience. It grosses me out when my teenage kids say it constantly – even when they are complementing my cooking. "This pizza is SICK!" No. Stop. Think of something else to say….
