Toni is the master cheesemaker at Corzano & Paterno dairy in San Casciano, just half an hour outside Florence. She makes both traditional Pecorino cheese (with milk from the farm’s own sheep) but also uses techniques that are more customary in France or even England. The quantity is low and sought after by restaurateurs and gourmands locally. Corzano e Paterno is also a winery and makes excellent organic wines, plus olive oils (classic & mono cultivar).
