I am from Barcelona and we do that sauce as well, is very typical Catalonia sauce, we called ALIOLI.. meaning garlic and oil. We eat it also with meats,,and some rices..as well. in catalan ALL ( garlic) OLI (oil).

From watching your mom cook it doesn’t appear she cooks often. Peeling onions is much simpler than how she was doing it. When cutting up vegetables she was doing it very slowly. I realize she was probably doing it for the video but as anyone that cooks we all know how to peel onions and cut up vegetables much more efficiently.
I worked for a summer in Juan-Les-Pins and studied in Provence so I know those areas well. Huge memories, merci!
Rice, kidney beans and corn?! Uhhhh.. I’ll stick with the French restaurant, in America! 😝 duck confit.. amazing sauces..gratin potatoes.. lamb chops, escargot in wine sauce.. so many delicacies 😊
