On a delicious road trip through France, we visited the Comté Cheese PDO region in the eastern part of the country, along the Swiss border.

One of the most fascinating stops was visiting fruitières or cheesemakers, where Comté cheese is made using traditional artisanal methods.

At Fruitière 1900, in the Jura region, cheesemakers Paco and Amandine make Comté in the style of the 1900s.

In this YouTube short, we go behind the scenes to see how Comté cheese is crafted in the traditional artisanal way, preserving centuries-old techniques.
