Welcome back, and today on GG’s Recipes we are making an old family recipe called St. Jacques Special.
If you are looking for an inexpensive family meal follow along and enjoy.
First we cut up a couple stalks of celery, about 1 cups worth.
(1 Cup celery $0.40)
Next is a medium onion diced, again around 1 cup.
(1 Cup diced onion $0.10)
Then we dice our washed potatoes, 2 cups worth.
(2 cups diced potatoes $0.50)
Keeping the skins on and placing them into a bowl of salted water until we are ready to add them.
In a large heavy pot we add a tablespoon of oil
And add our onions to soften.
And add the celery to the pot.
Add a half kilo or 1 pound of ground beef to the pot
(1 package Ground Beef $3.00)
Break it up and brown it with the vegetables.
While our beef is cooking, we can add our seasonings and spices.
1 teaspoon of thyme
1 tablespoon of Basil
½ teaspoon Celery seed (optional)
½ teaspoon Paprika
Stir.
Add a can of Diced Tomatoes to our pot and stir.
(1 can of diced tomatoes $1.50)
We then add 1 tablespoon of salt.
Drain and add the diced potatoes and mix.
The potatoes will help thicken up the sauce as they cook.
Add about 1 cup of water to the pot, cover and simmer on medium low heat for 45 minutes.
Add two Bay leaves.
Add 1 cup of Peas, frozen, fresh, or canned.
(1 cup of Peas $0.80)
Check and stir the mix a couple times during this stage.
The potatoes should flake and fall apart when pressed with a fork when they are done.
Be sure to remove the Bay leaves before serving.
Serve it up in a bowl with a bun or bread on the side.
This dish serves 4 to 6 people and costs about one dollar and ten cents per serving. Inexpensive and delicious.
