I fell in love with Ethiopian cuisine when I spent 3 months there on a medical mission with a NGO. The food was great, and sometimes spicy. I also got addicted to Ethiopian coffee, which is first cooked over a fire, ground, brewed, and usually served sweet. The culture is rich in history and religion. The people there are friendly and a truely beautiful people. The only thing was there are no pigs there, due to the many Muslims that prohibit anything made of pork, as well as the Christian faith that do not eat anything with pork as they follow the Hebrew law regarding pork and shellfish. Nowdays, I don't get to eat Ethiopian food as the nearest Ethiopian restaurant is a two hour drive from where I live now. Shalom
