French Onion Pasta is so gooood! I love French onion soup but it’s to hot to eat in the summer so I combined it with pasta. Trust me, IT SLAPPED!!
1. Prepare the Onions: In a large pot or Dutch oven, melt the butter over medium heat. Add the sliced onions and cook, stirring occasionally, until caramelized and golden brown, about 20-25 minutes.
2. Cook Pasta: Add minced garlic to the pot with the onions and sauté for another 1-2 minutes until fragrant. Add the pasta, broth, water, white wine (if using), Worcestershire sauce, dried thyme, salt, and pepper. Bring to a boil, then reduce the heat to medium-low. Cover and simmer for about 10-12 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.
3. Finish and Serve: Remove from heat and stir in half of the grated cheese until melted and creamy. Taste and adjust seasoning if needed. Serve hot, garnished with the remaining cheese and chopped parsley.
