Ingredients:
Potato – 1 kg
Vinegar – 4 tbsp
Salt
Garlic – 2 cloves (Crushed)
Curry leaves
Oil
Pepper powder
Chilly flakes
Sambar powder – ½ tsp (Optional)
Asafoetida (Optional)

Steps:
Slice the washed and peeled potatoes. Cut each slice into long pieces.
Leave it in a bowl of water until ready to use.

Boil water in a pan.
Once it comes to a rolling boil, add salt and vinegar.
Add turmeric also, if you need yellow colour fries.
Add potato strips.
Cover the pan and bring it to a boil.
Once it boils, remove the lid and keep boiling on high flame for 5 minutes.
Switch off and drain the water.

Heat oil in a pan.
Drop potatoes into the hot oil and fry in batches.
Don’t mix with a spoon immediately. Mix after some time.
Once the bubbles disappear and oil clears up, remove from the oil.

Heat oil in another pan or use the same pan with just 1 or 2 tbsp.
Add crushed garlic and curry leaves.
Lower the flame and add pepper powder and chilly flakes and mix well.
Add fried potatoes and mix well.
Add sambar powder and asafoetida and mix well.
Sprinkle some salt and switch off.
Crispy and tasty french fries are ready to serve.
