A similar dish to the zucchini one we do in the med; cut them in the same way, drizzle with salt,.lemon juice, lemon zest, good olive oil, and torn mint leaves. And let it sit for 30 min in the fridge, the lemon juice does the cooking to tenderize it on its own. Then eat! You can roll em up or have em tossed together like noodles. And if you really want, you can season some ricotta (ricotta, lemon zest, salt, pepper, parmesan) and roll the zucchini around em, for something a bit more substantial
