today we’re going to make flan first up is a caramel just combine sugar and water in a big pan mix it together then place over medium-high heat and leave it alone just wash the sides with a wet brush so it doesn’t burn and once it’s nice caramel color you’re going to pour it into your pan and set it aside now we’re gonna mix up one package of room temperature cream cheese crack six eggs into here clean this up until it’s nice and smooth one can of evaporated milk one can of sweetened condensed milk one tablespoon of a nice vanilla mix this up until it’s nice and smooth pour that onto your caramel we’re gonna pour some boiling water into here put this into our oven preheated to 325 fahrenheit it’s gonna cook for about 50 minutes let it cool down run a knife along the edge invert onto a cake dish with a lip the caramel paired with that creamy custard is beyond enjoy

Question: when my mom used to make it, she didn’t use water for the caramel, and would only heat sugar in a metal pan (over low heat) to let it caramalize and move it slowly to also coat the sides. and then later puts the custard mix in the same pan.
I’ve never made any flan myself and I want to try her way but I haven’t seen anyone do it that way. Any thoughts?
