the second french fry tip and probably the most important is to double fry the fried fries so first blanching at a lower temperature allows you to evaporate a lot of that moisture without browning the outside if you skip this the moisture from the fries will turn your brown taters soggy second a little bit more scientific but heat bursts starch molecules and causes them to gelatinize creating these little fissures on the outside think of them as like microscopic nooks and crannies when you go to cook them blanch them at 275 for seven to eight minutes freeze them to help remove any extra moisture then fry them at 350. remember that the color is not the goal it’s just one of the indicators so that’s why i wouldn’t fry a 375 or 400 getting crisp fries takes time so don’t rush it after you’ve put all this work in

I boil mine for 15 minutes, dry for 10 minutes and just fry. stuff is crunchy.
