Dick Cavett has been nominated for eleven Emmy awards (the most recent in 2012 for the HBO special, Mel Brooks and Dick Cavett Together Again), and won three. Spanning five decades, Dick Cavett’s television career has defined excellence in the interview format. He started at ABC in 1968, and also enjoyed success on PBS, USA, and CNBC.

His most recent television successes were the September 2014 PBS special, Dick Cavett’s Watergate, followed April 2015 by Dick Cavett’s Vietnam. He has appeared in movies, tv specials, tv commercials, and several Broadway plays. He starred in an off-Broadway production ofHellman v. McCarthy in 2014 and reprised the role at Theatre 40 in LA February 2015.

Cavett has published four books beginning with Cavett (1974) and Eye on Cavett (1983), co-authored with Christopher Porterfield. His two recent books — Talk Show: Confrontations, Pointed Commentary, and Off-Screen Secrets (2010) and Brief Encounters: Conversations, Magic moments, and Assorted Hijinks(October 2014) are both collections of his online opinion column, written for The New York Times since 2007. Additionally, he has written for The New Yorker, TV Guide, Vanity Fair, and elsewhere.

I have to go around what I’m I’m going to do here is instatic onion soup and I just have some canned soup here and I’ve got it all heated up and I’m going to put a bit of vermouth in this is to hide the taste of the can this is if you’re out on the camping trip you’d always have little bottles of Brandy and things around and then I because we don’t you’re usually supposed to have croutons and I’ve got some of these star bought croutons here and I’ve got three in these little onion onion pots there so we’ll put in some grated cheese wouldn’t you do you take camping trips and you would take this kind of stuff along wouldn’t you camping trip with onion soup with well you take canned or dehydrated onion soup and here the I’m Ladle soup in here you can see how very easy this is to make a really delicious dish and showing that you don’t have to make it all yourself as long as you have enough side things to put in like like your cheese and your lur and things what makes uh when you have onion soup what is that makes that scum over the top or the it’s that so the U not very elegant way of putting it now we’re going to have another another little dollop of this and this is just a little p wine there oh give it a good shot oh I have a have a CP thing in here we’ll just add a little bit of that that was an egg y’ from some t wine that gives it a little tiny thickening then we’ll put some more of these instant croutons on top and then we’ll gratina it and that’s where you know what in gratina means what precisely gratin means just to Brown the top uhhuh things oh from from the French word BR the top yeah exactly let me put some more of this on then the question on your camping trip would be awfully neat I’ll knen all of that off there now now we have certainly messed up the cam well that’s for the for the chip books and Bears you got to feed our furry friends now here’s your blow torch which you would naturally be carrying around with you before going into this I might notice some of the things that it tells you to do uh use only in well ventilated areas that’s that’s outdoors with care to avoid fires do not store tanks in living room what does that say in living room in living areas and uh are you about to do this now yep I think I’ll just I have there’s a call for me backstage well dick don’t come back cuz it’s doing beautifully oh I can see it from here that’s beautifully grade now nothing is blown up now you can come back almost through shouldn’t the torch be blown out before you uh that’s blowing out ah no I’m sorry about that grief leaving you there but I that’s all right no one appe te but isn’t that nice it’s all nicely nicely Brown and we’re ready to go how can you touch this the ball is you just melted the edge of the bowl into the well now how it taste while it’s still warm see it must be hotter than um the hinges that’s quite good I think oh that’s good booze that’s you’d never you never You’ never know that was canned or dehydrated soup would you not at all with all this stuff in it it was canned and oh yeah it was nice yeah it was the dehydrate is very good too you know there’s one thing that that has always troubled me about the eating of onion soup and that is when you you take a spoonful of it and and then someone asks you a question and you get you are halfway to your mouth like this and you’ve got this thing that I think you just have to use your fingers in that case is there some way of snipping those or well we could always burn them off with a blow Tor that would be good that you get even more gret that’s right no so if everyone carried a little blow torch or You’ have a servant paid simply to P up well this this you know this is for us the year of the blowtorch which we’ve been doing a city tour and we have a giant flip-flop apple crep and you you caramelize the top of it with a blow torch and then if we’ve already done that in one city then we have the giant flip-flop potato and onion omelette which again has cheese on the top which is brown with the blow torch well what did people do before blow torches I remember eating these things in the past gosh I don’t know I don’t know how they did oh gu I do know exactly what they did they had you had a piece of an iron a big thick piece of cast iron on a handle you put that in the fire and heat it very hard then you pass it over like this and that the Red Hot Iron caramelizes it and that’s why rather than that they they begin use using the blow torch after that was invented because pastry chefs use it to caramelize things so it is a serious cooking tool it’s not just for last so you didn’t just get that as bring it out here as a stunt to to frighten no but in in all things we always have to have sort of Vis we call them visuals and something a little silly visual but practical cuz this me this worked out very ni this isn’t bad but why is it that I taste the liquor more than I taste the uh cuz I put an awful lot in I wasn’t kidding about that problem now I have if you say something while I get the cheese out of my teeth want the blow torch again no no do what is the difference between um a hair and a rabbit I was thinking of those rabbits earlier and well now a hair a rabbit h a r e a rabbit is born naked with its eyes closed and the hair is born with fur and its eyes open or it’s vice versa I don’t know where are you put but that that is true you mean eyes with its fur open or or you mean the one M no yeah I mean yeah say you think of a little naked bunny rabbit one of those tender little things that those people write about but the hair is tougher cuz when the hair has hair on it you remember that the hair is hairy I never know what to believe when you’re here I really uh is is there oh is there a quick way to do onions without making yourself cry underwater maybe yes under underwater or else chill them chill them because onions contain s oxide which produces sulfuric acid in your eyes but that slowed down by Cold I’ve dissolved by water suspected this yeah thank you Julia Child for being here and we will see you next time [Applause] [Music] [Applause] [Music] [Applause] [Music]
