PFrench Onion Soup
Ingredients
• 1 tbsp olive oil
• 5 tbsp butter (divided)
• 7-8 medium-sized onions, sliced
• Salt, to taste
• 1 tbsp jaggery powder
• 5-6 cloves garlic, minced
• Few sprigs of thyme
• 1 tsp black pepper powder
• 2 cups brown stock (see recipe below)
• 2 tsp tomato paste
• 3 tsp Worcestershire sauce (or substitute with soy sauce and garlic powder)
• 3-4 pieces of baguette
• 1/3 cup grated Gruyère cheese (or Parmesan/Mozzarella)
• 1/3 cup grated Cheddar cheese
Instructions
1. In a deep pot, heat 1 tbsp olive oil and 3 tbsp butter until melted. Add the sliced onions and mix well. Stir continuously and season with salt.
2. Gradually add the remaining 2 tbsp butter, mixing well. Once the onions turn light brown, add jaggery powder, minced garlic, thyme, and black pepper powder.
3. Once the onions have caramelized completely, add brown stock and tomato paste. Mix well.
4. Add Worcestershire sauce and adjust the seasoning with salt and jaggery.
5. Bring the mixture to a boil, then remove from heat.
6. Place pieces of baguette on top of the soup, then add the grated Gruyère and Cheddar cheeses.
7. Place the pot in a preheated oven for 5 minutes, or until the cheese has melted completely.
8. Serve immediately in soup bowls.
Brown Stock
Ingredients
• 1 tbsp olive oil
• 1 carrot, diced
• 3 onions, diced
• 1 celery stalk, diced
• Few sprigs of thyme
• 4 cups water
Instructions
1. In a pot, heat the olive oil. Add the diced carrot, onions, celery, and thyme.
2. Roast until a dark color forms.
3. Add the water and boil for 10 minutes.
4. The brown stock is ready to use.
Notes
• Parmesan or mozzarella can be used instead of Gruyère cheese.
• Soy sauce with garlic powder can be used as a substitute for Worcestershire sauce.
today’s story is about one soup that changed my entire world the story starts in 2009 when I was in the 10th grade my friend and I decided that today was the day to make french onion soup she took a whole slab of butter cooked onions in it and then we added some chicken stock cubes on the Rainy June day we both thought we were Master Chefs fast forward to 14 years I was in Goa vent to ASA house a beautiful French restaurant I saw french onion soup on the menu and thought sure let’s see if this is as good as the one I made the minute I took the first sip of that soup this soup was like poetry so today I have recreated this recipe which is guaranteed to make you happy on a r day and I’m happy to report that 2024 Natasha makes better soup than 2009 Natasha
