2 medium eggplants
1 tablespoon extra virgin olive oil
⅓ teaspoon salt
¼ teaspoon black pepper

FOR THE SEASONING
3 tablespoons extra virgin olive oil
1 tablespoon red wine vinegar or other vinegar
1 clove garlic minced
¼ cup parsley finely chopped
¼ teaspoons dried oregano
⅛ teaspoon red pepper flakes
¼ teaspoon salt

the chimy chur with the vinegar is just wash the eggplants Pat them dry with a kitchen towel then cut them into discs and arrange them on a baking tray Lin with parchment paper brush them with extra virgin olive oil season them with salt and black pepper roast the eggplant for about 20 to 25 minutes or until golden brown and fork tender in the meantime we are making Chim churi sauce with finally minced garlic finely chopped parsley red pepper flakes dried oregano salt extra virgin olive oil and red wine vinegar give it a quick whisk then drizzle on the roasted plants you can put as much as you want while they’re still warm easy right

  7. Please stop wasting EVOO by heating it. Why do this? COmpletely destroys all the benefits of it being cold-pressed.
