hello everyone and welcome back to the perfect tasting box this is the June episode but this is a special one actually because this is with a collaboration we just recently started with Sarah CO’s radio DJ and we doing a tasting box of three or a tasting box of six actually with her wines the wines which she chose and we’re going to taste these wines with Christopher Delon master somier as we always do right after the [Music] intro welcome Chris how are you doing SAA hello everybody all fine thank you all fine and ready to talk about wine for change yes exactly what else should we talk about uh well most important thing on the planet you know as far as I’m concerned especially when you read the news uh I mean the wine news as such uh and you see what’s happening in especially in France and in Europe in general uh but in France basically we’re going to test aett sh which probably is one of the last because the origion has been plattered by very very heavy hell which completely destroyed the Vintage 2024 as such but potentially The Vineyard has been so damaged the wood and the vine themselves that there is also going to be an impact on the 2025 vage if you’re a wine lover it’s better to pile up right now but in this case Sarah Sarah Cox actually chose quite a nice little wine for her I mean you know we are this is the sh from Sil mon 2022 fantastic vintage in Bur as technically sh is part of it shares one same great variety the The Shard there’s no red wine produced in the appan shab 4,200 planted of Vine divided into P sh shab shab and Sh grw sh is only about 1300 so so rough a force of the appellation in production under this I specifically it doesn’t mean I mean pretty mean small in French as we all know however it doesn’t mean that small brother or less quality wies it’s more to to do with with location rather to be on the Koto you’re more on the flat land so again when first comes this is the the first Vineyards that usually are are affected and we all know that sh is very heavily affected by by uh you know on on on a yearly basis for the people that from my generation they will remember the winter of 1985 where shab was hit by a heavy Frost to minus 15 Celsius and minus 15 Celsius is really the borderline where where Vine can survive so people that tell you in ch they’ve got Vineyards 100 years old nah a lot of those Vines died during that winter unfortunately anyway so the CH in ch is called bon as to refer to the city of Bon the Center of burgundy and again sh production and here we you’ve got a very specific soil K region which is basically not a type of soul but a time frame within the Earth history it’s about 150 million years old and it’s Mar and Limestone if you walk in the sh Vineyard you will easily find some oo shell and some other leftovers of fossilized mollusks because it’s used to be obviously the seabed a lot to say about this estate it’s about seven generations even though the real wine maker before they used to sell their grape to different cops but it’s only now basically three generation that have been making the wi by themselves and since 2007 is the granddaughter as such Stephanie that that took overover the estate so that’s that’s a 15 vintage belt and and you can tell I was actually I didn’t know the estate I didn’t know I know ptia we we have ptia from a different V one maker in the businesses is and yes some some stunning stunning stunning expression are coming through this this appellation despite its name that could suggest as a younger smaller brother from the obviously the sh the prier Cru and obviously the gr crew which represents you know 9% of the appalation it’s nothing so in term of the color it’s bright light yellow with lemon H so again there’s no much Evolution there a little bit of greenness as well low viscosity my glass um so it doesn’t suggest a lot of aloh on the bottle it says 12 and a half and to be honest on the palette you don’t feel anything it’s so well integrated 12 and a half is actually quite refreshing for shans especially again talking about global warming now it’s so easy to find things at 13 and a half 14 14 and a half for even for white expression uh the nose really really sings you know you’ve got apples brood apples red apples pears Blossom honey s Circle there’s some lemon zest as well in there there’s load of of wet rocks you know this is really the the shab soil that’s really come through the vibrancy minerals there’s also some white flowers it’s really well combined and superbly well knitted a very exciting nose the palette is has a beautiful richness and osity on on the mid pallette and the way it attacks you know on your tongue if feel with again with stone fruits there’s definitely more apples the the pears the blossom on ccle again salted shells wet rocks you know again this this sort of fruit and minerals all well you know well knitted and well combined together really putting a lot of energy and vibrancy on the mid ballet which is kind of Med Med weight you know it’s it makes the wi so appr approachable so enticing so so so so delicious it’s a beautiful expression again you know the pette is also you know you’ve got this of first approach then you’ve got almost the minerals and then again the food comes with more red apple bruise Apple Pink Ladies that sort of you know Apple sides as such I’m not talking about cider I’m just talking about fresh you know crunchy um Apple flavors that a beautiful you know fantastic great Drive of acidity again to beautifully lift the pallet and a beautiful and long finish on on salted rocks it’s a cracking wine again to be served between 12 and 14 don’t get it too cold because it will kill the flavors obviously not too warm because that’s a bit less fun especially when you was looking for for that sort of freshness and acidity to be honest with you it’s a 2022 vintage it delivers straight away it definitely can sit in the cell I wouldn’t sit on it for 15 years but a couple of years will not arm the wine whatsoever and a fantastic Delight with again you know sea food platters Cocos oysters muscles you know crbs and another mesk will will work wonders even you know poultry creamy sources obviously because that acity will fantastically cut through and yeah I’m really pleased with that expression beautiful Choice from s so here we are basically if you see the The Province sort of coastlines there Mar and then you have Tong and you drive basically about 35 miles up north in direct line and you’re reaching the bottom of the Koto VAR so the Koto Vara on provance as they are called in their app system it’s quite vast area and they are divided between the southern part and the northern part the shatow maroi is owned by nobody else but George Luca so George Luca of the warstic Star Wars Trilogy that well it’s not even Trilogy nowadays any longer and this is called the Skywalker venard the story behind the Skywalker Vineyard is because Geor Luca was also inspired by to make to make wine like Francis for Copa we also a Vineyard in Napa Val started in the Marine County of California with pin war and chardet and then he extended his desire in France and then both about 10 years ago slowly but Surly rebuilding and spending quite a few dollars there it’s a 16 hectar property umed by Lucas I was saying and just kind of about 70 miles north of tulong in the ovar so as I was saying the blend of different gra variety here we have gach sanso S and caben funny enough no white gra vary just red because again you are much Northern and much more Mediterranean as a as a climate so cooler as winter and medium not really hot because of the elevation again between 300 and 600 meter high compared to closer to the Sea where you almost flatter and therefore much warmer the cab avenue here is a bit of the international Gra gra variety whereas gr S and S are very much low but it really does add a bit of depth into the wine 2023 really really good vintage again in this part of the world beautiful quality beautiful ripeness fantastic balance and again you know the one shows it you know you a bright light sort of onion peel color you know very light as as the market really enjoy it yes as as you’re showing I mean coming in into that kind of clear glass bottle you really see that magnificent bright color coming through uh and as a medium viscosity in my glass it’s a 12 and a half alcohol as it says on the presentation uh below so so again very very balanced when it comes to the alcohol content and development on the pallet the is is really open and fresh with vibrant intensity to me really is the berry character the red berries the straw The Raspberries the crownberries the lingon berries that come through you know first place that sort of ripe character fresh crushed there’s a bit of wild strawberries as well as candid fruit and then you also have that sort of floral Notes The Violet and then the herbal the mint the sage and some GED pepper fin enough I found some sort slight spices again the palette is is tot and and splendidly vibrant it’s one of those ones that you test and you’re like oh wow didn’t expect that you feel with again with strawberries raspberry fresh and crushed uh loads of cranberries red currant even floral and herbal NES are coming along on the mid pallet it has a medium weight is again it’s one of those ones that really kind of deliver freshet vibrancy approachability drinkability to a certain extent with beautiful lift of acidity so again it’s that combination of ripe fruit fresh food crush fots and lingering acidity that kind of elongate the wine on your palet and make it really up and almost make you salivate and you’re thinking you have a sip you put your glass down and you go back to it Tire delivery is splendidly fresh it’s again well put together and with the sort of con frot and the conflicted frot that lingers and then adds to the complexity and and the length and slight zesty finish I found it s of almost of lemony which again make you wants to come back to it again one of those wines you sort of open and enjoy straight away between I would play between 11 and 13 maybe even 14 but not lower and definitely not higher than that in term of of temperature you don’t really need to celerate the Vintage here is of the essence the freshness in Ros is is of the essence perfect for the operative s of style on on a sunny day has to get the the pette going around fresh face you know barbecued veggies or even white meat and ptry you know because again that’s fantastic zesty acidity that will cut through all those different texture I wouldn’t even see that with some sort of Asian type of food as long as it’s not too spicy again just to to get the lift going and doing and playing his magic sakx chose the this is the wine which is the most obvious for her for a June selection in many ways because that sort of provance Rosé style which just keeps growing in the UK at the moment in terms of sales and in terms of exactly I mean it’s it’s very interesting to to see the the the the sort of Ros pattern over the last 15 years you know it used to be a very cyclic you know from June to sort of September you know you would you would sell Ros you would buy Rosé you would drink Ros and now the habits of drinking such wines is is 365 day it’s it’s very much something something that is consumed all year round from the 1st of JN to the 31st of De December you know it has no real weather pattern attached to it any longer yeah exactly it’s a recent discovery from the British people I would say but it’s a good one because I think Ros is for all year round and it’s very vers the target food as well but you mentioned bordeau very briefly and we have a bordeau here and then exactly this is the the last of the selection of of SAR shesto omok 2019 so nothing really to say about the Vintage but you know one of those fantastic vintage you know in the 20th century for bord a vintage that that has a lot of ink used to to write up it’s called it’s the CUV Des it’s right at the bottom CU Des it’s made by a lady called vges since 2015 unfortunately I couldn’t find much information I called them and no one picked up the phone so I don’t know really if it’s a s label couldn’t really find any information but it’s omok don’t forget you know omok again it’s one of those appellation and the 100,000 hectar of bordo that is probably about 10% so aate shatow domain and ter that produce different things so again in term of pure flavor profile I would imagine that cabinet dominate with some Meo there maybe T cab but I wouldn’t I wouldn’t tell the cab must be if it’s there it’s you know five 10% Max because you don’t have any green character to it so going into my my testing notes the one took a bit of while to open up which you know again refer to the quality and and potentially ass to quality of the Vintage which you know has has brought a lot of ripeness beautiful structure and some edging capacity my glass was kind of garet with a deep core and a garet rim so again expressing some youth in the color and a medium viscosity P enough on the label States 12% of which are find quite unlogical on a vintage like this maybe I don’t know to be honest with you it didn’t again the alcohol didn’t really come through on the testing so I wouldn’t imagine that is more than that but you know with the French laws European laws in general you’ve got one person so you can play you know 12 and a half yeah or or 11 and a half but I would imagine it’s more 12 and a half and again remember that the labels are usually ordered a year before the Harvest so they don’t really know what will be the the next thing coming so on my testing not I said you know the wine opens slowly it took some time it took some air I didn’t deant it but I would suggest to decant it eventually when you open such a thing you know either give it a couple of hours or just decant it quickly before enjoying just to give that extra push of oxygen to break down the molecules and the ethano in in order to kind of develop the SL profile it became with of orange peel floral notes and then then as the air came through then the black fruit then the ripe blackberries and came along nicely and and softly again blue plums earthy leaves there’s definitely a sort of evolution on the nose a b more than on the color enough but again in an evolution that is cyclic that is normal that’s what you expect from a wine that is now turning you know five years old from a potentially large state or even the small state but from different elevation different age of Vineyard you know we’re not talking gr crew here we’re talking about omok classic and again on the S wine making usage stainless steel or concrete or Oak I can’t tell you I didn’t feel any oak on the testing Birds maybe there’s some large old oak used but I can’t tell it didn’t really come through on the flavor profile even though you would argue that I got some Sedar wood again on a no so put potentially a bit of Oak there but again that’s a big question mark and on the pallet you know it’s it’s round the wine is is really rounded again it’s very enticing it’s pretty easy it’s textured it’s really gentle very soft so I guess beautiful ripness and know completely the stems and then press nicely and then going into that into that vat to perform the fermentation without really much work so therefore you don’t have to are T coming from and then giving the wi of that you know suppleness and again approach for border of of that vintage and then the mid pallette is again filled up with black fruits a lot of berries plums cherries even come through there is some spices on the palette so again you know uh Brown spices are found so it could be also derivated from ‘s Edge but again it’s a question mark there again leafy earthy and a sort of a Florest flow Tunes also come through the mid pallet is balanced beautiful midweight again it’s not the most complex one you ever drink but it’s very approachable with fantastic freshness you know again the acidity Drive really lift up and then makes it really approachable and enticing and it elongates as well the finish on on primary food again you know at 12% alcohol volume you gets so much without having to extract so much so much alcohol it’s quite it’s quite bluffing to be honest that’s why I’m I’m questioning that number on the label maybe this is why they didn’t pick up the phone by the way they might have S the tax man say there’s a problem there so again open let it breath you know the can’t it if you can last minutes or use even large glasses between 16 and 18 Celsius I wouldn’t go our lower nor higher than that just again to keep the one in control with a bit of freshness again you know with that sort of June uh View and IDE early summer days I should say so grilled barbecue meat would work well spicy dishes Indian even Chinese earthy flavors I like those sort of things with with that type of wine you know mushroom wizo or cerol you know cheeses but again you know sort of earthy cheeses like San from the center of France that would work wonders with that sort of Cellar flavors and and the sort of beauty acidity and fruit compact of the wine I think madok tends to be one of those sort of underrated regions where people don’t really look anymore but I think you can get some real gems out of madok very often yeah yes there is I mean you think about an estate that is very famous sh sisak which is under the omok appellation and they make some great wine but again omok being so vast as a as an appalation you’ve got a a plethora of different soil a different PL of different one making style approachability it really depends how close or far away from the ocean you are how close or far you going from the land forest which protects from the wind it depends on your elevations it depends on your gra variety the edge of your Vineyards and your approach to farming those Vineyard as well as your as your wi making so it’s all about crafting the product and to be honest it’s 20 pound yeah it’s I think it’s worth every penny for 20 quid I think you get a very very very approachable and delicious expression but to be honest with you the Star Wine of the day if I had to pick one is the ptia the P sh was was a real Discovery for me I really enjoyed thoroughly what Stephanie is doing and a fantastic glass of wine yes I was I was very much you know not surprised by the by the Ros because I think that is something what sarak Cox would obviously choose if I if I can think ahead what she’s going to choose I think she would definitely choose a Ros and certainly for the summer is a perfect yeah but I think it’s very smart I mean youer in a box three different style three different colors and again thinking about this sort of barbecue style you start with the PTI sha you almost like get the P going then you move on to the Rosé for the sort of fish and sort of starters and then you move to the red with the meat and the cheese so you could have that sort of nice Crescendo flavor profile building up in strength and in body that would definitely work for for table of four or more around nice and their barbecue and also there’s something else as well which is not actually in the tasting box but there’s the reason for it it’s a champagne so which she chose as well but obviously because it’s a sparkling wine it would be difficult to put it into one of these tasting box and pouches but pouches will is next step in term of technology I don’t think we are there yet no but nevertheless get three or six of these wines and hopefully it’s going to be a joy to drink yeah no no no I agree I agree agree you know good pre yourself of what’s coming for June exactly well and I think with with that this was sarak Cox’s first ever perfect tasting box a white a rosé and a red all from France very stylish box we’ll do we’ll do one for the win with a more International selection yes exactly well we have to talk to her about that yeah yeah yeah I’m glad she went she went to CL I mean you know it’s for the ecy exactly well guys thank you for watching and thank you Chris for your time andk you and and then speak to
