and then I just order the fries I’ve never made fries from potato my favorite kind is I like a Sho string fry to get that perfect we’re going to use a mandolin so we’re going to cut really thin like this and then we’ll stack them up and fry them so with french fries to get the best kind of fry it’s called double frying so you fry at like a lower temperature you take that out usually you freeze it and you blast it at a high temperature and that’s how you get super crispy fries this way we’re doing that same idea but it starts low and it’s going to rise through those both those temperatures you’re going to get the cold it’s going to cook the potato through and then it’s going to end in high you hear once we start hearing it we go okay that’s close to done now let’s take a look at our fries here coming together these are going to be crisps

  1. What are the high and low temp ranges? Ive been doible frying both on 375 but im happy to hear about how i can do it better
