INGREDIENTS (makes 2 servings)

2 ripe and juicy mangoes
1/2 cup milk
1/2 tsp cardamom powder
1/3 tsp cornstarch/potato starch
1 tsp sweetener of choice – i used maple syrup
2 slices of bread – preferably brioche/challah
1 tbsp butter, unsalted Pistachios, to garnish Whipped cream, to garnish

DIRECTIONS:

– Combine the milk, cardamom powder, cornstarch and sweetener in a flat bowl and mix thoroughly. Soak the bread in the mix, turning it after 30-40 seconds. Don’t leave it in for too long.

– Heat up a skillet and add the butter. Toast the bread on both sides until golden brown.

– Layer fresh mango puree between two slices of the toast.

– Top with mango pieces, whipped cream and crushed pistachios. Sprinkle on some more cardamom powder for extra flair. Enjoy!
