An excellent short video on how to choose your wine to suit the meal and the occasion. Hosted by James Bailey from the French restaurant Celestin, based out of Toronto, Ontario and featuring Chef Ivan Tarazona. www.celestinrestaurant.ca

hi my name is james bailey i’m the bar manager here at restaurant celeste and i’m just going to go over on how to order wines when ordering from a french blindness follow me right this way we’ll pull out some wines and here’s all right so now we’ve got a few bottles um and just considering they are all french wines uh i’m actually going to go over them a little bit with you so starting off looking at a french wine list french wines aren’t actually allowed to have the great variety labeled on the bottom so if you’re looking for something a little bit lighter to go with let’s say for instance if you’re looking for a red that you can pair with some red meats as well compared with fish just because as we all know everybody at the table doesn’t always order the same thing we can go towards a pinot noir coming from burgundy price points it’s mid-range uh it’s a mid-range wine as well on the body it’s a little bit of a lighter structured wine so it won’t overpower your fish as well and you can get away with having it with some red meats absolutely easy flavor with that one and let’s say i have your table you’re looking for something nice light and crisp something fun for the summer i highly recommend this one that we have right here this one actually being a spanish wine something that we’ve recently imported for the restaurant and this one being i think our summer drink for the whole season i actually ended up having to buy three cases of it for myself i just don’t tell my girlfriend if you’re looking to celebrate for instance if you’re uh with your boss and you just settle a huge account or if you’re on your anniversary and you’re looking for something big to celebrate and you do like those big juicy ones to go with lambs with steak i highly recommend anything coming from the southern world this one being a shotgun of the pop absolutely amazing flavor full body very rich fruits on it as well and then over here if you’re looking for something nice light and crisp to go with your seafood dishes this is going one of my favorites it’s a song ser 100 sauvignon blanc pairs amazingly well with all seafood scallops whether it be white fish you can get away with even sushi or ceviche something a little bit more citrusy to go along with that absolutely amazing all right so we do get a lot of guests here that are whether they’re coming for our first date an anniversary first couple dates or whatnot they come in and they actually give us a shout a couple days in advance or a day before just to kind of work around and to understand our wine list a little bit better just it being french it is a little bit more in depth so they give us a call let us know about their budget they let us know about what their palettes are like as well sitting at the table and it gives us a bit of a challenge to try and find what kind of wines we can best suit around them so if you wish please give us a call at the restaurant at any time and i’m more than happy to work with you and try and find something that best suits your palate thank you very much you
