French Macaron Recipe with no resting required.
1) Begin by sifting 140g almond flour and 140g icing sugar together.
2) In a mixing bowl, combine 110g of egg whites and 110g of caster sugar. Use a stand mixer to beat until stiff peaks form, add color gel or powder at this point, never use oil based colours.
3) Remove the mixture from the mixer and gently fold in the almond flour and icing sugar until you achieve a lava-like consistency.
4) Prepare a baking tray with parchment paper, silicone mats, or Teflon sheets. To prevent cracking, use the tray upside down as the sides can cause issues with heat distribution.
6) Immediately pipe the macaron shells onto the prepared baking trays.
5) Bang trays to even macarons and burst air bubbles.
7) Skip the resting period and bake at 150°C for 14 minutes. At the 7-minute mark, briefly open the oven door to release some heat.
