let’s make runny passion fruit yolks cut
a couple of passion fruits in half and
scrape out the seeds and use a ladle to
press out all the juice in total you
need 420 grams of juice after add 60
grams of sugar 1 cinnamon stick and 10
cardamom seeds now mix it and then let
it marinate for at least three hours
after pasta to find sieve now measure
200 grams into a saucepan and keep it
for later then add a touch of scents and
gum and mix it to thicken it now fill a
square mold and let it freeze for one
hour after stick a toothpick in every
bowl and then let them freeze to
completely solid now for the jelly mix
the 200 grams of passion fruit juice
with 50 grams of ginger syrup and 3
grams of copper powder then mix it well
and bring it to a boil now turn down the
heat and remove the passion fruit bowls
from the mold
dip them twice in the jelly and then
gently remove the toothpick now let them
defrost in your fridge with the
toothpick hold down let me know in the
