In this very special episode, we caught up with our favorite culinary couple, Jessica Yang and Robert Compagnon. In 2019, we visited them at Le Rigmarole, their yakitori-centric restaurant, but a lot has changed since, and now they run the wildly popular ice cream parlor and wine bar, Folderol, and have turned the former into Pizzamarole, a sourdough pizza place they run with their friend Dan Pearson. And this is where Action, Clovis, and their rag-tag wine and food crew hung out for a few hours one afternoon this past summer. Lord we’re back visiting our old friends
Jess and Rober from L rigar roll they
used to do their version of yakatori but
now they’ve since opened up fero a wine
and ice cream bar it was a perfect place
for the fellow us to hang we’ve always
wanted to open an ice cream shop and
when the wine C next to our restaurant
the rigal was for sale we thought hey
why not do the two both of them are just
real passions so we’ve always had wine
you it’s like this crazy rabbit hole
that you just go down further and
further and further and ice cream is
just
delicious we try to have ice creams
where you can really taste what it is
it’s usually based around the seasons
but we have tons of classic
chocolate Mexican vanilla and olive oil
ice cream which we’ve become really
known for people end up spending
afternoons here they’ll start with a
glass of wine then they’ll have some
shakuri they’ll have a second glass of
wine they’ll have some ice cream they go
back to Wine back to shakuri back to ice
cream it’s sort of a like you know pick
your own
adventure wine game has really gone to

treat the vineyard first which champagne

he really turned people’s philosophy
around how do you make great wine first
and then make champagne I don’t know if

forever I’ve been waiting my whole
life we always eat ice cream first then

go let’s go our restaurant rigal is
currently on a Hiatus so during this
period we called up a friend of ours Dan
who makes the best pizzas on Earth he
sort of took over the restaurant as a as
a pizza restaurant so I make the dough
the day before it’s all naturally
fermented there’s no yeast it’s it’s
100% sour dough one of the things people
always love to talk about is how many
hours they ferment their dough
fermentation is kind of like a bell
curve it goes up to reach its point and
then it goes down so like how you want
to get to that Peak point it doesn’t
really make that much a difference so my
personal preference is to do that in
about a day we were able to kind of
blend a lot of the toppings that rigol
would conventionally use but put it on a
pizza and I think that’s one of the
things that made this really fun was to
take the rigal angle on food but do it
with
pizza you guys should probably with a
actual SE oh there an actual we they had

pizza raw and then they just cook for 90
seconds in the OV wow that’s why you’re
getting that unbelievable crunch on your
vegetables huh oh my God we all were
enamored by the crunch from the
cette the lemon spring the lemon on the
potatoes oh all right Chef this
