was dessert we start off by roasting our
ripe bananas for up to 2 hours we then
separate the banana from the skin
reserving the puree fruit to make our
ice cream and Infuse rum and caramel we
then trim the skins and soak them in
syrup for up to 24 hours the following
day we drain our skins before frying for
our caramelized banana skin crisps for
our mousse We Begin by infusing cream
with fresh vanilla and banana powder we
strain and combine with gelatin leaves
we then add more chilled cream mascaron
before folding in whipped cream and
leaving to set to construct our bananas
we pipe our mousse followed by Frozen
Banana Jam and our caramel we allow to
set entirely before demolding and
rolling in sa for service we plate the
frozen banana mousse with banana skin
caramel more sabl and roasted banana ice
cream before finishing with roasted
peanuts and our crispy banana skin

  1. I liked steamed banana taste… but the skin worries me cause some banana trees were sprayed w insecticide fungicide etc.

  2. The peel thing seems gross at face value, but I'd totally try it. Its cool when something that isn't visually appealing is actually pretty good.

  3. Imagine this, the banana peel goes into a worm bin where it’s turned into fertilizer for vegetables…. And you don’t have to eat the fried piece of sugar. Dessert looks really good, the fried peel looks wasteful and unhealthy.

  4. Even when you use organic bananas wash the whole fruits really, really good (with warm water) before proceessing…

  5. i’d love to know that ratio of people who eat the banana peel and people who don’t. how many are y’all throwing away at the end of the night lol
