Madeleines are delicious light & airy spongecakes from France with a distinct shell shape. The addition of lavender makes these a purrfect Spring-time (or anytime) treat. Bon appétit! 💜🐈
French Lavender Madeleine Recipe
💜113g unsalted butter, melted
💜1 tsp vanilla extract
💜2 tsp dried cooking lavender
💜1 tsp lemon zest
💜1 cup plain flour
💜1+ 1/4 tsp baking powder
💜1/4 tsp salt
💜3 eggs room temperature
💜3/4 cup white sugar
Icing sugar for serving
1. Microwave butter in a microwave safe bowl until complete melted. Add vanilla, lavender, and lemon zest and stir to combine. Set aside to to cool. In a medium bowl combine flour, baking powder, and salt. Set aside.
2. Using your @kitchenaidausnz mixer with the whisk attachment, beat the eggs on medium speed for 1 minute. Slowly add the sugar while mixing, and increase the speed slightly once all sugar has been added. Continue to Mixy Mix until the batter is pale and thick. Turn off your mixer.
3. Carefully fold in the flour with a spatula until just combined, and then fold in the butter mixture. Cover the bowl with plastic wrap and refrigerate for 1 hour.
4. Preheat oven to 190c / 375f and spray your madeleine pan with non-stick oil. Spoon batter level into the moulds until just below the top. Bake for 8-10 minutes or until golden. Remove from the oven. Allow to cool 5 minutes in the pan, then gently remove. Dust lightly with icing sugar. Bon appétit! 💖
