This dish was on the menu through February when the blood oranges were at their best 🍊 Paired with simple 85% chocolate from Islands Chocolate and layers made from crisp, laminated pastry and fresh blood orange segments.
We use a blood orange purée to bring acidity and depth.
I love this dish.
