– 4 tablespoons unsalted butter, separated in half
– Olive oil
– 1 shallot
– 1 teaspoon sugar
– 1-2 teaspoons garlic
– 1/4 cup white cooking wine
– 1 cup chicken broth
– Lemon juice
– 1-2 teaspoons capers
– Parsley
– Salt and pepper

MOZZARELLA EN CARROZZA
– 4 slices white bread
– 2 slices mozzarella cheese (1/2 inch thick)
– All-purpose flour
– Eggs
– Seasoned bread crumbs

ADDITIONAL
– Vegetable oil (for frying)
– Parmesan cheese (for finishing)
