Ingredients for Pancakes (Crêpes):
1 egg
2 teaspoons sugar
1/4 teaspoon salt
2 tablespoons heavy cream
1 cup milk (250 ml)
3.5 ounces (100 grams) all-purpose flour
1 tablespoon cognac
Instructions:
In a mixing bowl, whisk together the egg, sugar, salt, heavy cream, and milk.
Gradually add the flour to the mixture while stirring to prevent lumps from forming.
Once the batter is smooth, stir in the cognac.
Cover the pancake batter and let it rest for 15 minutes.
Heat a frying pan over high heat and grease it lightly with oil or butter.
Pour a small amount of batter into the pan, spreading it evenly to form a thin pancake.
Cook the pancake over high heat until it turns matte in color, then flip it and cook the other side until golden brown.
Repeat the process with the remaining batter, making 6-inch (16 cm) diameter pancakes.
