#shorts #foodscience #frenchfries

This fry was made with science and a little bit of science in your cooking will make your food taste way better take these triple cooked truffle fries for example if i were normally cooking fries i would just chop up potatoes and fry them but if i wanted to make the

Best fries ever i’ll boil them first to rough up the surface freeze them to dry them out and fry them twice so two layers of crispiness form uses scientific principles about how potatoes break down and fry at different temperatures and the result is this perfect fry that’s crispy on the outside

And fluffy on the inside

    I mean…the truffles help too

  2. Thank you! Finally someone I can relate to when cooking. I use the science when I’m cooking. Especially with controlling temperatures when cooking any type of meats.

  3. ah, the Heston Blumenthal's recipe. This is basically why most home cooked fresh fries are worse than a frozen one. Because those basically how the semi-fabricates for a fries are made. Soak, boil for a 3-4 minutes, let the steam out. This makes starch to cover the outside of the potato slice, acting as a natural "breadcrumbs" layer and speeds up the cooking process while frying. While regular fries (cut the potato, throw into oil) are gonna be soggy after cooling down, those remain crispy and crunchy. Restaurants usually prepare those in bulk, freeze and cook to order. When I worked in a restaurant I remember spending hours at Thursday evening preparing those for the weekend.

  4. Have you ever had yuca? In Central America we have something similar to this except you don’t have to do so much work lol

  5. Use common sense, then you will know that reason people eat chips and french fries or even make it, is it quick to make and tasty…if it takes long to make then you might as well make curry or biryani…tastes better

  6. I’m not touching JT at all this season until the colts and JT mend their relationship. This contract situation is toxic asf and there’s a possibility he’s gonna sit out

  7. Every fry is made with science, mate. The deep fat fryer doesn't work by convoking the fucking spirits or some shit.
