Looks to wet/raw in the center for me. I like omelets, but with things in them, like….onions, green/red peppers, cheese. My ex was the same way. I actually had to flip his over and cook that side as well before stuffing it.

I used to not like my eggs that soft, until I had them like that on a cruise ship. Omg… so addictive! Buttery, creamy, and seasoned with just salt and pepper. I could eat a dozen eggs that way! I even preferred them over the waffles and pancakes (I have a terrible sweet tooth).

Sorry I have litterly learned so much feom some of your techniques, but folded eggs is not an omelet to me. Why wouldn't you not just scramble if you wanted just eggs?
My chef instructor ripped me a new one bc I overcooked my omelette in culinary school. I told him to stop being a wanna be Ramsey and leave me to my overcooked eggs & then I made one the correct way so he’d leave me alone. 🤭

I learned how to make French omelettes, and while my sister was going through chemotherapy for stg4 ovarian cancer it was literally the only thing we could get her to eat. I made them 3x a day for her. I haven’t made one since she died, but I’d make them a hundred times a day if I could get just 10 more minutes with her.
