[Applause] it is day two of French onion week that’s right all week long I’ll be making french onion soup inspired eats which I’m very excited about today we are taking those delicious caramelized onions and making a french onion grilled cheese sandwich listen I love a soup and sandwich combo especially for like a

Lazy man’s soup and sandwich combo the soup is in the sandwich very exciting so the first thing I wanted to talk about is onions yesterday we covered the basic French onion soup but I wanted talk a little bit about the different types of onions and how I like to use them so

Right here I have got four different types of onions the first one I’m going to talk about is this little baby this is a sweet onion typically you can find varieties like uh videlia really really nice and tasty this has a good amount of sugar in it the flavor is not overly

Complex though so I actually don’t like to use it for caramelizing onions I like to use this onion on a burger or as an onion ring something I’m going to cook for not a long time or even serve raw really really tast tasty for that essentially when you’re looking for one

They’re kind of squatter they’re a little flatter than a normal onion and they kind of have a yellowy color with kind of see-through skin now moving on in the kind of world of onions this is a classic white onion also known as a Spanish onion these little babies are

Really really good for things like salsa something where you’re going to have raw crunchy onion it’s got a little less sugar in it than that sweet onion and the flavor is a little bit more complex to be honest again I like using this in salsa that’s pretty much it but most

Like the color it turns so for caramelized onions like when you’re making that french onion soup I like to use this little baby now this baby is a cooking onion also known as a yellow onion or if you’re in like England I think they’re called brown onions which

Honestly makes sense they’re kind of brown this is the one that you get in those like yellow fishnet bags they’re usually the cheapest onions they last a good long time and they have the punchiest most oniony flavor they’re good and sturdy so they hold up really

Bit smaller more like this size so this recipe calls for four of this size so if you’re buying these I’d stick with two so now I’m going to talk a little bit about how to chop my onions for French onion soup or caramelized onions I typically like to just slice them so I

Peel my onion Slice on through the root side because that’s going to hold everything together and then I just take my knife and just kind of slice down you want to go on the thinner side the thinner you slice your onion the quicker it’s going to caramelize because there’s

Going to be more surface area now if you really want this thinly sliced and quick you can always bust out your handy dandy food processor this is one of my my favorite things to do you grab an onion you pop it in that Little Chute you get this baby pop it

In and you have got sliced onions and literally no time plat honestly I always am like should I bust this out and if you’re making french onion soup and you need to slice up like four or six onions this is a good tool to have So speaking

Of those onions over here I want to caramelize some of them I’ve got four onions here and I’m going to add in about a tablespoon to a tablespoon and a half of butter into a pan over medium actually yes medium low heat add in those four onions and then I’m going to

Season that up with some salt and pepper you want to add that salt cuz that’s going to help draw moisture out and actually help them caramelize even quicker and cook down now typically if you’re making caramelized onions people will tell you you got to cook them for

Like an hour and yes you can do that but I don’t have time nobody has an hour to cook down onions that’s way too long so I like to cook them for about 15 minutes over this medium low heat just to get them started and cooked down a little

Bit after that that point what I do is I turn the heat up to medium add in a little bit of maple syrup which sounds kind of strange but it helps caramelize them quicker I cook those for about 10 minutes and then you end up with something that looks like this little

Baby all those onions have cooked down into this beautiful Rich caramelized situation really really tasty now into there I’m going to add in some extra flavors so I want two cloves of garlic just grated right on in since I’ve already cooked down those onions this

Garlic just needs to go in for about I’d say 30 seconds cuz essentially I just want to heat it through and cook off that raw garlic Punch If I were to put the garlic in at the same time as those onions this stuff would burn it would

Not be delicious it would not be caramelized and we don’t want that now for a kind of French Vibe I’m also tossing in some herb to provant so I want about a teaspoon of that and Herb to provant is just a herb blend that’s kind of French it’s got like lavender

Rosemary thyme all things delicious in it add about a teaspoon of that on in give that a stir up and then just to bring everything together and get all those little stuck on bits off the bottom of the pan I’m going to toss in a tablespoon of some Brandy which I’m very

Excited about now if you’re a cocktail maker that’s half an ounce for any of those cocktail heads out there but I’m just going to add in a tablespoon typically when I’m making french onion soup I also add in some wine and that wine brings a ton of moisture and more

Flavor but since I’m making this into a sandwich I don’t want it to be really like wet I want it to be kind of Jammy and cooked down so those are looking beautiful they smell amazing if you didn’t want to use Brandy you could use a little splash of wine but why not

Bry’s amazing so love Brandy I’m going to bring this on over and just assemble those sandwiches so I’ve got that beautiful onion mixture all cooked down and now I need to talk about some cheese so you could use Swiss cheese you could use cheddar cheese but classic French

Onion soup demands Grier cheese and Grier cheese is an Alpine cheese it’s really really good it’s kind of nutty it’s kind of sort of a Swiss but it doesn’t have holes in it so I don’t know how that actually is a Swiss maybe it’s from Switzerland I don’t know I haven’t

Looked this up I got to Google it it’ll be fine so I just want to grate some cheese because I like the grated cheese it helps kind of everything melt really nicely so just great enough to go on your sandwich oh my gosh I’m very excited about that I love cheese who doesn’t

Love a grilled cheese and then right always good now for my bread I’m just using some Sour dough now you typically again just want to use a little bit of butter on the outside we are making french onion soup so you know go heavy on the butter just spread that on out

Getting all those edges and corners and then to build this baby pop that cheese on little bit of that caramelized onion mixture goes right on top and then you just sandwich that all together pop some more butter on the top cook that off in your little panini press or on your

Stove and you end up oh oo with something looks like that listen she’s a little smooshed but she looks delicious let’s get that off of there oh my gosh look at that cheese and onion it looks like a tongue oh my gosh I’m excited all
