Ingredients for puff pastry:
• 250g of strong white flour (very cold)
• 200g of butter (very cold)
• 5 g of salt
• 120ml of cold water
Ingredients for the custard:
• 10g of butter
• 25g of caster sugar
• 15g of cornflour
• 5g of flour
• 2 egg yolks
• 1 tsp vanilla extract
• Zest ½ orange (optional)
• 150ml of milk
Ingredients for almond cream:
• 2 eggs
• 100g of caster sugar
• 125g almond powder
• 100g of soft butter
• 1 tsp vanilla extract
For the glazing you will need:
• 1 egg yolk
•A bit of milk
• Few drops of vinegar
