Brioche with raisins.
INGREDIENTS
250 ml milk
70 ml water
80 g sourdough starter
5 g salt
60 g sugar
2 eggs
50 g butter
Pour the milk and water into a large bowl, put the sourdough starter into the liquid. Add salt. sugar and mix everything. Now add the flour and mix everything. Knead all the ingredients with your hands. Now add the butter. And knead the dough well as shown in the video. The dough needs to be kneaded very well. This process takes about 15 minutes. Form a ball out of the dough and place it in a bowl. Cover the bowl with a towel or plastic wrap. Let the dough rest for one hour and add 100 g of raisins. The dough should be folded. Cover the dough and let the dough rest and ferment for 3 hours. Make another fold and let the dough rest for another hour.
Then divide the dough into 10 90g pieces and form a ball. Cover the circles again and let stand for 10 minutes. Then arrange the balls side by side in a heatproof dish Anoint with egg and milk with a brush and cover the buns for another 20 minutes.
Bake in the oven at 356 F/ 180 C for 25 minutes.
Pour 70g of sugar into a saucepan, pour a little water and melt the sugar on the stove. Once the sugar has melted, add the juice of half a lemon.
When the buns are baked, brush the buns with the melted sugar and lemon.
