” The most critical phase of the barrel production is the barrel firing in relation to the (wine producing) region specificities. Each region has a particular type of firing corresponding to its type of vine: Bourgogne and its Pinot Noir, or Bordeaux and its Cabernet Franc and Sauvignon.”
