  1. You blanch them in the fryer on a lower temp first, then finish in the higher temp oil. That's how we did it in the restaurant I worked in. We'd cut them and put them in 5 gallon buckets covered in water so they obviously don't oxidize till you're ready to use. Don't boil them. No need.

  2. That's not how to make french fries, you don't need baking soda, don't boil them in water and don't freeze them. Real french fries are fried twice in oil or better beef grease at different temperatures and that is how you get them beautiful and crisp on the outside
