Minees just like this throw them into some water until the water runs clear bring some water to a boil and go in there with one teaspoon of some baking soda the baking soda alkalizes the water which helps break down the surface of the potatoes so when you’re frying it it
Gets nice and crispy drop your fries in the water and blanch for 1 minute no more than that take them out and freeze them now fry them up until they’re nice and crispy seing them with salt and you’re all done

You blanch them in the fryer on a lower temp first, then finish in the higher temp oil. That's how we did it in the restaurant I worked in. We'd cut them and put them in 5 gallon buckets covered in water so they obviously don't oxidize till you're ready to use. Don't boil them. No need.

That's not how to make french fries, you don't need baking soda, don't boil them in water and don't freeze them. Real french fries are fried twice in oil or better beef grease at different temperatures and that is how you get them beautiful and crisp on the outside
