What is up y’all welcome so welcome welcome thank you so much for joining me on a friday night to find out a little bit more about what is going on with wine folly and behind the scenes and with the french wine course which is what we’re actually here to talk about today in

Case you just popped in from magically somewhere out there in the world so this week was the launch of the french wine course which was a huge deal because the french wine course is essentially the culmination of an incredible amount of work that we’ve been doing here at

Folly for the last uh 10 years which is education a different style of education we’re trying to back out we’re trying to get perspective and learn more about a region to give you the tools to learn about that region on your own so myself and christine marcelio master

Of wine put together this incredible course and i want to show you a little preview on the inside of what you have in store for you if you’ve purchased the course and are curious and have questions and i kind of want to pre-answer some of those questions so

Course to build this worksheet out for us for you so that as you go through the course you can start filling out all the details and something that i’ve learned with online learning is that and and passive learning essentially is this is that when you aren’t doing something

You’re not holding as much information and so she’s done an incredible job making this awesome awesome worksheet for you to fill out on all the regions of france that we cover in this course which are many which brings me to my next point what is this course about

Fundamentally what do we have here and uh we have four over arcing modules which cover many different regions so if we take a look at one of these modules here we can see northern france and northern france covers several major wine growing areas and that module surrounding that module is a theme and

Each of these courses each of these modules has a unique theme so for example in this northern france module the theme is food and wine pairing this is a great area to pair wine and food in because of some of the qualities of these wines as you will discover in this

Course and so in the introduction we i play a little fun video where we go on an adventure trying to find wine to pair with food and at a local uh place here in san francisco and then in the course we have christine marsilio walking through all the regions you need

To know and what is actually the nuts and bolts of that place so that you can feel confident pairing food and wine so we’ll cover loire valley alsace champagne in that way and as you can see each course has a different theme so for central france it’s all about ordering

Wine in a restaurant something that can be very intimidating how do you pick a wine to pair with food how do you find the right wine for your group that is having wine together so this is a great place to not only develop your skills in the french wines

Themselves just learning from christine but you also have an opportunity to apply it i will say these challenges for each of these modules are optional because i’m not going to force you to buy wines to finish this course that’s not the goal you will retain a lot of knowledge

Without actually purchasing wines if you do not want to do that or if you can’t do that for whatever reason however i think if you’re interested and you’re motivated i think you’ll find that adding that that extra challenge into each module help you quite a bit so

Again we’ve got four modules four sort of our overarching themes food and wine pairing pairing in a restaurant collecting wine buying wine as a gift these four major themes and then four challenges to actually do that thing whether it’s order wine in a restaurant buy a collectible wine and challenge

Yourself to actually fulfill that thing so then at the end that is where we do have something that is required to do and that is your final project now this project is uh we’ve i’ve selected two options for you and the idea is you’re gonna after you’ve experienced all this incredible knowledge building

With christine marcel again who’s a master of wine not only is he a master of wine she’s also a master’s degree in viticulture analogy from bordeaux and she also is a num bolinger award winner which there are 32 basically valedictorian of the master wine crew so she’s awesome and delightful and very

Very welcoming and educational in that friendly kind of a way so i don’t think you’re gonna find her to be intimidating at all i promise you um so but when you finish your sessions with her the goal is let’s let’s actually put together a wine

List and i have some examples um of what that looks like you’re going to receive essentially these uh these an opportunity to fill out your wine list so one of them is let’s say you’re really you’re a foodie you love food you’re a chef you cook at home you just you’re

Interested in pairing food and wine and really to challenge yourself to pair food and wine is to try to try it out and we’ve selected created some recipe options for you and we’re challenging you with considerations on what types of wines from france can you pair with these dishes so that’s project

Number one now project number two is if you’re a hardcore francophile and you just really really really want to solidify your knowledge and this is the opportunity where i think for those of you who are interested in tasting wines along with the course this is going to be your

Final project option because again there is no requirement to purchase wine with a course yes we will be tasting wines in the course yes we will be talking about different wines in the course but you don’t actually need to purchase wines to go alongside this course that being said

If you want to solidify your knowledge building a list to go along with this course and actually purchasing some of these wines and tasting them is the challenge actually the ultimate challenge uh it’s it’s you acting as sommelier for your own education and uh so this section covers the

Major regions of france which we cover in the course and your job is to pick the wines but probably it’s going to be anywhere number between two and four wines to go with each of these major regions with the learning that you’ve done from the course what from what what

Christine and i have laid out in that section so that is essentially the goal here and what we’re doing as a little add-on and bonus and i think we’re going to figure out how to do it so it’s not just pre-launchers we’ve created this awesome little french wine course community group that

Anyone who’s purchased this course and right now it’s just pre-launchers but i’m going to look into maybe opening it up to all purchasers of this course for the next month will be monitoring this community and setting up this community to help you on your progress with this course because to me

Each one of these modules it is a lot of learning france is an incredibly deep deep region and topic albeit once you know these secrets that we’ll uh show you i think you’ll find it to be a lot lot easier you know getting confident with reading labels and appellations understanding where a place

Is is actually more important than like what exactly is in like what exactly is in the bottle knowing where it is is actually more important so once you have these tips these these things will empower you to be able to confidently move through different appellations you know france

Has over 350 appellations so are you required to memorize them all no that is not a requirement but do you need to know maybe the most important ones and popular ones yes in order to pass the certification you will need to know some of those more popular

Ones and that’s what we’ve included in this course so um the community group i’m super excited about and we’ve already been posting it some pre-launchers have posted it already so that should work out really really well and i think i’m going to stop sharing screen now and go back to uh

Regular how do i do that how do i do that yeah we’re switching over all right so that’s essentially what we have with this this course in mind and um you know interestingly enough france was is the first course that we’re doing at this level this in-depth kind of a level and

Because it’s so much knowledge i think it’s probably going to take if you’re if you’re doing this like we all have jobs so if you’re doing this on weeknights or maybe weekends you set up your challenge if you want to do a challenge i think each module will take you approximately

A week to do you know casually going through each of the segments and thinking and filling out your worksheets and then planning your around your challenge then that final you know challenge that final wit list making will probably take you about a week to do so we’re looking at

About a month of time to get you really up to speed on the wines of france and answer those really burning questions like how do i read a label how do i become confident with these wines how do i know what these wines taste like even

Though i have no idea like is this red or white like what what grape varieties in the bottle and so the answers to these questions i really believe are in this course and especially with christine in there walking us through everything with so much clarity and and consistency in the presentation and so

The team if it’s a really great idea we do hear from a lot of you on a very frequent basis because of phil because he’s so vociferous and he is representing everyone who is you know making notes about this that another and occasionally i’ll get in there um because i’m obsessed with

Social media and i can’t help myself so yeah welcome i’ve heard i’ve heard from a lot of you uh that is a fact uh and and and she’s absolutely right when we uh hear from you and when you’ve got ideas and there’s so many good ones and

We do get them back to the team uh we do our best to get back to every last one of them uh but uh yeah yeah it’s uh it’s good to be here so i heard uh you have uh something something something open and we’re gonna do some cross comparing we’re talking

About this earlier yeah so what are you drinking i have got a uh here i’ve got a shot enough to pop blend i did a little this one’s 70 grenache and uh the rest of it is syrah and more vedra uh that one’s that one that’s a

That’s a name that always escaped me i’m going to get a lot of people telling me i completely mispronounced that one right did i get it more videos i guess i guess you know the thing about french is they is they like they’re so wealthy they don’t even pronounce all

The syllables so i think it’s just more bad yeah no no but we don’t need all the letters you don’t need you just you just truncate it off because you can afford those extra extra valves exactly and it makes the word so pretty so yeah so um

I opened this up and uh actually took a few notes and it’s very very good so far i’m really enjoying it any any excuse to open up a cdp is a good excuse by my by my standards so so that’s a pretty serious wine you have there you know

Shot enough to pop is one of those regions that people get very very excited about um the new what is it the new chateau of the pope uh which is the which is what it translates to which happened in avignon around the 13th century or something like long ass time ago and

And we’ve never forgot that the pope was there in france and so that’s the label of wine and they had vineyards around that because gotta have sacramento wherever there is catholicism there is sacramental wine or in this case delicious delicious red wine and uh these vineyards around shut enough are just remarkable because

Of in in this entire area the cote d’irone region is where it is shattered enough to pop is kind of this crown jewel because of these soils that they have there that are extra extra hot and in and we’ve had a long long string of cool

Years in this region shot enough to pop albeit it’s warming up a bit and making things interesting in other areas uh but that uh shut enough to pop has long been the highlight of this region and i think it’s interesting that you have a wine with 60 percent grenache that’s a little

Bit of a story because you can put up to well it’s actually you can put up to 13 grapes officially and sad enough to pop although some will tell you there’s actually 21 grapes you can put in shot enough to pop if you do the math and

Check the dna analysis of all the grapes but tell me about um being mostly grenache how’s it taste what were your primary fruit flavors that you wrote down oh yeah we’ve got yeah we’ve uh this is this has a lot of good kind of jammy red fruit uh and a

Little dark fruit on top of it i actually wrote it all down here in our fancy pants nice oh you got the green one yeah we filled up the uh red one so we’re starting up on this one and this is this is for everybody who’s watching us on

Social media these are where we keep our labels how do you do that dude that is so cool i’m going to tell you right now because we got we get every time i post one of those we we get about three dozen of y’all asking how we do it my my method

For doing it is when when the bottle is finished please wait until you’re finished drinking the bottle uh and then i i have a little funnel and i make hot water in the coffee maker and very carefully uh fill up the bottle up to past the label and

Just let it sit for a couple of minutes and the glue loosens and i use an old costco card and just kind of slide it off and uh good for a lot of things it’s not just the savings so and then we can stick it in there and it it

Sometimes sometimes the labels aren’t so good for it i found that i have more trouble with italian labels than any other uh kind but uh you know otherwise you know we have we’ve got a lot of representatives in here but uh yeah but to get back we uh yeah i got

Some notes of like macerated jammy cherries uh raspberry plum uh that’s those just really really uh jammy fruit really warm it’s it’s it’s really nice and then when you take a sip of it the tannins just at first they hit us in the face like a pair of old leather straps i literally

Wrote old leather straps uh which uh we gave it about half an hour and it chilled out uh quite a bit uh but still some really chewy tannins uh and uh just absolutely good stuff and i got some herbal quality and a little bit of cinnamon and some hoisin sauce like

There’s kind of almost a savory quality to it uh it’s it’s it’s got a lot uh going on and it’s it’s really really really lovely and uh yes i uh my fiance will be so pleased that she’s not the only one who compares me to jack black uh so thank you

I’ll take that i’ll take that tenacious d rocks phil’s got a background actually and you did uh writing for film ready for cinema basically i did some playwriting uh movie writing stuff like that um and a lot of stand-up comedy so uh i am used to the the concept of being

In front of a bunch of people which helps in moments like these awesome all right so so that’s incredible so i’ve got another special wine from um and this is ash by the way that little guy very curious to me he’s um he’s usually super super coy so

Nobody gets to see him but that’s that is one of my cats that has been harassing me um and so i i decided to open up a bottle for today because it’s like like this is a really special moment for all of us and we’ve been working really hard for this moment so

Um if you go camera two you ready for this crop boom we’ve got uh chateau uh lengua barton and this is a sound julian technically this is a grand cru clase um and this isn’t a premier grand cru say this is a twasium grand cou classic would put

Still fancy ass wine from bordeaux and you’ll learn about the classification system in bordeaux when you study bordeaux in the bordeaux section in fact we have very very detailed sections on burgundy and in bordeaux and that’s going to be extremely helpful to build your confidence finding those wines and

Knowing the difference in what to look for because those regions are so classic they become more and more complicated with age so this wine is a bordeaux it’s mostly cabernet sauvignon it’s coming from what they call the left bank which is an area that specializes in cabernet because it tends

To get a little bit warmer the soils actually get a little bit warmer than other parts of bordeaux which makes it possible to ripen cabernet in that perfect kind of way and voice this wine inky if you can’t believe how dark this wine is it’s so dark

And uh the the color you know a young wine like this this wine is meant to age maybe 30 years you know before opening it so i’m totally committing infanticide here by opening the bottle right now but i don’t really care it smells really good it’s gonna have

High tan into it but i was about to say you know i’m gonna do it yeah you got a story while i give this a taste and try i guess i well i i do actually i think i think uh the one of the reasons shatne after

Pop and gsm blends are one of the ones that i’ve been going back to over and over in my life is uh i was taking the wset twos and uh i think on one of the days it just occurred to me how um daunting some of the regions and

Memorization was going to be uh it scared me to death and then they put down a gsm in front of me and i had a sip and it calmed me right down so i’ve been i’ve been having a lovely love affair with the gsm blends ever since so that’s been working out nicely

Someone was asking to take a look so first growth or the 1855 classification was something that uh napoleon iii put out as like uh hey tell me what wines are good from bordeaux and i need to let everybody know because they’re you know we’re trying to make france look good as

Always and um third growth of leaving barton yes correct and so this classification system came out and there were only so many wineries around at that time and someone went around and raided all the wineries and created this classification system and now it is the system that dominates

Bordeaux in on premiere in sales the most the top ranking you know chateaus get the top prices and these wines are incredible this wine is actually truly remarkable it’s smells like black currants this like cherry liqueur there’s a little bit of this dusty sage quality to it almost like violets

It keeps going on crushed gravel uh almost a like a it’s it’s spiced like a cinnamon spice or allspice so definitely some oak aging probably in this wine and um man and when i tasted it the tannins while wilts being refined on my palate were very very present so middle

Sides middle back my tongue and on the sides of my palate so it was really hitting all those spots and so when i taste a wine like this and i can taste the acidity in the wine i can i know this wine will age well because i’m looking for certain traits and we

Actually talk about what traits to look for in wines if you’re looking for age-worthy wines in the bordeaux in that section on bordeaux because it’s such a collectible region so if you are interested in collecting wine you want to know what to look for in the wines this course is actually

Talking about those specific things so which i think is really great um why is gsm such a classic bund is that a french origin plan i love that question erin thanks for posting it up so uh you know what what i love about this wine that uh

That we have here is uh grenache syrah morvet grenache being a super fruity wonderful grape and syrah being a little bit deeper and richer and adding color and spice and more red adding even more color and tannin and i think when we look at france you know these grape varieties that are now

Famous everywhere cabernet sauvignon chardonnay pinot noir grenache raw it these these grape varieties originated here and they were doing something called messiah selection where hey it makes good wine let’s cut off a piece of it and plant it down the road make another vine and make more of it so

While france was building up its wine culture they were doing hardcore old school agriculture planting what tasted good and that’s actually what created cabernet sauvignon cabernet cabernet sauvignon was wild so it’s wild cabernet so if you’d imagine back then they were like that one grows well plant more of

It and so that is what built up this collection of of grapes so getting your answer on gsm why is gsm special why do people care about gsm is in the south we had difficulty ripening syrah and more vedra on those cooler vintages and but we and we could get some good stuff

Out of grenache but we didn’t have the tanning structure so we would take a little bit of this and a little bit of that and a little bit of this and we put it together and we would make it work and that is what made the shad enough to

Pop blend was this idea like hey what grows together goes together we can make we can figure out to balance the texture and taste of this wine and make it last and work if we use different grape varieties and there’s more to it than that and i won’t

Get into it because but this is a beautiful concept that that was really something that was pivotal in creating these international grape varieties which now dominate the world you know like cabernet and chardonnay and and so when you learn about france and french wines you kind of reach back to those original

Reasons why they were pivotal grapes and important things and you kind of get a taste of of what that is and what it feels like and and and these wines are very different than anywhere else and people will talk about terroir but you’ve tasted a gsm blend from somewhere else haven’t you phil

Uh i’ve had a yes absolutely uh but yeah the you know i think you’re absolutely right when it comes to the terroir and where it comes from it’s it’s it’s tradition yeah but it comes from something that’s worked for generations among generations upon generations when you go

To france and you speak to the winemakers i think for us in the states where we live on kind of a 200 year old timeline you meet some of these winemakers and they’ll very casually throw out oh i’m a 14th generation winemaker here on this land uh i’m my family’s been making wine

Since before america was a you know a united states or even a colony uh and so the tradition yeah there’s a part of that but it also comes from is it good you know if it if it’s stank if the combination of the the terroir the geography the the you know geology

If that didn’t work we wouldn’t be seeing this it just wouldn’t keep happening so it and a different terroir is going to bring out different things and frankly the fact that it’s a blend and like you said we each one of the grapes brings a little something to the

Bottle the fact of the matter is uh playing with that blend playing with terroir you’re going to get very different uh bottles so it’s it’s a lot of fun yeah yeah um answering a couple of questions that have popped in uh uh the and to yes uh thank you for the

Correction uh shot enough to pop uh avignon the pope was there in the 1300s to the 14th century not the 13th century always mix those two up it’s we should just make it the same thing why is that is for someone like me who slightly dislikes it you’re ruining me

It’s not even fair um the uh one of the the questions that was asked was about the swine in the vintage of this wine you know this one we picked out actually for our wine club um it was it was in our holiday we had two special holiday

Gift packs that we curated um through our right so we offer one club that comes out every two months and then on the holidays we bumped it up we had three offerings we had the wine club and then we had two sort of fun holiday packs and this was part of the baller

Pack and this is one of those wines that is is a super special wine it’s hard to get and so i was very excited offering we had we got we had it for a really great price actually in in the club um so it’s something that we’re trying

To do we’re trying to find amazing wines for you and trying to help you find amazing wines on your own so you can join the club if you want and to get started and to get comfortable learning about wine and tasting wine and then these courses are really an opportunity

For you to dive deeper and build your own confidence to find stuff yourself and to go and to go outside of your comfort zone right like if you’re comfortable buying wines from shed enough to pop you know there’s a lot more that can be found there and

One of the things that christine did in the course was she mentioned all the important appellations you need to know the things that people are going to talk about right because everybody knows them anyone who’s taken a course you know she used to do uh education with wine and spirit education

Trust so the things that we must learn in order to pass those certificates are included in this course but then she wanted a layer above that and we added in these alternative appellations that you should know about that make incredible wines today that are very very interesting and

Exciting and are maybe representing the future of where french wine is going and i think that’s one of the things that i’m so excited about in this course is that thing what about online stores because you can’t always read the label that’s a really good question buying wine online is my favorite thing

To do because i don’t get that pressure to purchase in a store and no and i don’t and nobody’s coming to me like and being like so what are you looking for because i’m not really looking for anything when i go into the wine store technically i want to buy

Everything and take it all home so it’s like i don’t know something delicious and good like i basically become blank when i walk into a wine store it’s so it’s even happens still i just get so excited about everything what did i want i want it all what’s this over here that looks

Good let’s get that so buying wine online is actually a really fun challenge because you can start with an objective and the course has an opportunity to be like you need to go pair wine with food what are you going to eat what are you going to pair with that’s

Actually going to work with that food so you suddenly have like all of these options get eliminated down to very few and then the second thing is when you’re shopping online you can actually do outside research look up the producer and what you’ll discover is that

Many many wines that are out there in the world are essentially i don’t want to i don’t want to totally badmouth them but they’re negotiate wines or they’re they’re not meant to age they’re not from a a producer or they’re made by a producer who makes a bunch of sub labels and this

Is just one of their many wine products but then you will find some wines stick out and there are these special wines that are made by individual producers they’re growing it their their estate wines and their and this happens across the entire world of wine and once

You know that secret buying one online suddenly becomes the powerhouse because you have time to look up with the producers and get excited about it and not just about prices like i i used to be a value shopper when i shop for wine and now i’m very interested in who the

Producers are and what the story is behind it so in the section about buying wine as a gift we actually spend a little bit of time buying wine online it was actually a challenge for me because i bought one for my business partner david and uh he

Lives in canada and how do you buy wine and candy i don’t know i’ve never done that before so i actually got him uh i didn’t get a machete enough to pop like you have but i did get him a another appellation um very close

To shadown of the pop was a coach around uh wine for him oh that’s good yeah um well and and a really great thing about the course when it comes to uh this sort of buying online that sort of thing as opposed to the store it still instills a level of confidence

Um you know depending on where you’re buying the wine from you know it you know you’re right you might not be able to just turn the bottle over and get a really good close look um but it’s going to offer the sort of information that you need to be able at very least

At a glance to be able to look at and go that’s what i need that’s what i want or oh no absolutely not next next wine please uh so it’ll it’ll get you started in that and it’s going to add a level of confidence which is everybody who’s bought wine online or

Otherwise needs so much of that confidence comes from knowing what’s inside the bottle and absolutely and and knowing that grenache makes fruity juicy fruity red fruited wines like you’re drinking right now and knowing if it’s 70 percent grenache it’s gonna 70 percent be in that realm of taste flavor category

Right and i think it’s interesting that you’re drinking mostly it’s a mostly grenache i noticed in the last well in it’s been several years in shenandoah they might allow 13 grape varieties as their major grapes but if you look at the fanciest producers there most of them are grenache dominant blends yeah

And the finest producers the ones that get all the high scores and points and everything tend to be grenache based and there’s really something going on with grenache in that uh enough depop area oh i mean in southern rhone in general you know you’ve got a lot of grenache being grown out there

Yeah yeah i love that recommendation to compare them with this region in spain priyarat also makes uh grenache karen yen uh syrah more red blends and they’re phenomenal and there’s this other region actually that’s starting to up and coming um you know we’ve looked to the rhone

Shut enough to pop is definitely an expensive area to buy a wine it’s a very fine wine um but if you go just a little bit west down the riviera you end up in this region called long dak russian um and long dark russian is an area that

Has long been known as the wine lake of france because they have been in a sort of a state of overproduction making very very cheap wines but what happened was during the time when they became this overproductive area since like the 60s and now the vines have aged and so

We have some incredible old vines in this area and you can actually find some crazy old vine carinian and some very amazing syrah from some there’s a new appellation there and all of this info again christine actually talks about the course i remember going through because i’m doing the editing

I’m in the editing bay doing throwing in all the images and and and lining up and language and that kind of thing so you can write down the stuff and spell it right while you’re writing it down so it’s on the screen and um she’s talking

About these regions in long doc and i’m i’m swearing like drooling on both sides of my mouth because these wines in this area is so so exciting and not many people know about the value there so you can pick up like basically this this wine right here this long

Longwa barton this is a great wine it costs 85 90 a bottle so it’s not cheap it’s a very expensive bottle of wine even though technically that price is still an amazing price for this wine and it’s hard to get especially this vintage now that being said that being said

If you go to long doc russian and you go to one of these areas producing exceptional quality wines you can buy a top quality wine for like 30 to 40 which is like what like you can age that thing for 20 years if you want to or you can buy a whole

Case of it and drink it every year and have a good time with it ah Okay so uh that’s my spiel on french wine um i’m super excited about what we put together and i’m so happy you guys could join us in this uh adventure i’m curious if people have some more questions for us uh myself or phil on anything honestly

We’re we’re a team we work together and we do a lot of stuff there’s a whole team behind us with us on the comms is monique and then in the background switching cameras is krom who’s actually our editor slash also very passionate about awesome live casting gear and that kind

Of thing and he helped set this up for us today so we have a lot of people who are invested in helping helping us learn in new technologically new fun ways there is on two different labels the high one and the low one does this mean low less quality cheers to clint from

Australia grapes grown in the same vineyard are bottled under two different labels one is super expensive and the other one is very low does this mean the low is less quality well that really depends on as the french would say um it could be um it could be that what

A lot of times if you have a vineyard especially if you have a large vineyard area you’re going to notice special plots in that vineyard especially if you’re in a sloping a dramatic landscape and what will happen is you’ll be like okay we’re going to vinify these separate plots and then

We’re going to make our super ball buster awesome blend and that’s going to be our super expensive fancy estate wine and then these other ones that we don’t use we’re going to blend those together and make our second label wine which is a lot less expensive but here’s the thing

I don’t know that the uh some of these price differences are so extreme that if you’re curious if you like the producer because there’s there’s wine making and there’s grape growing involved too and they’re for sure doing the same wine making albeit they might use used oak

Instead of new oak on the cheaper label wine so it’s going to be a fresher fruitier style but but essentially if you like that that vineyard if you like that producer if you like what they’re doing if you like the idea of their wine if you read their main wine and it’s super

Highly rated and very well appreciated you can bet that that second label wine is probably going to be pretty good and there’s some great examples of that i just having just done the work for bordeaux i’m like bordeaux brained right now but i just did the work smith lafitte

Great producer in the passock leonan area which is one of the areas that has a ground crew classification there at premier grand cru clase and that producer smith lafitte is super progressive very awesome farming technique amazing amazing high-end wine that they make as their main label their sub label is half the price

As their main label so if you want to get some smith out on on the cheap get their second label it’s a great wine it’s a super super great one and it ages very well as well so why not i’m kind of like i’m a little

Bit of the proletariat like if i can get the same if i can get it it’s and and you’ll know like if you read the details of that producer it’s gonna be great so um i would totally recommend checking out a second label especially if you’re not super familiar and already fully

Invested in the producer it’s a great way to test them and see if you’re actually into the juice that they’re they’re slaying absolutely dipping your toe in is important uh lori brown says need to find a group of winos to share a bottle most of my friends family and friends

Either don’t drink or drink bourbon absolutely i can speak from experience i think everyone on this team can speak from experience if you want to learn more about wine get some wino friends because you split the cost uh you get to try more uh with more people your your you know

Broadening your horizons in a much quicker way uh and on top of that you get people to bounce ideas off of it’s uh it’s a really nice ritual i think i think wine tasting is in a big way all about the ritual and the more the

Merrier yeah i agree i agree totally as i sip this wine alone in my store but i’m with you and i’m with all of you so this is yeah yeah we’re gonna make it work right 2020 happened this is we’re together yeah we’re apart we’re together we’ve got ash back there you’re good

Oh yeah oh my god [Laughter] funny this is a good question uh madeline uh chardonnay from france how do you know if a particular wine’s been in contact with oak is there something to look for on the label that is a great question because there isn’t [Laughter]

However there is a secret and and we mentioned this actually in the course uh it’s in the burgundy section because oh cost money that’s the number one issue with oak and the french are extremely pragmatic and they know when they’re spending money they gotta make money so generally speaking the

Wines age and oak tend to be more expensive that’s one general conclusion but then there’s another secret and that’s in the appalachian tiers that they have in that region and generally speaking okay there’s some exceptions to the rule which we also talk about in burgundy but generally

Speaking the higher you go up in that appalachian tier in burgundy the more likely that chardonnay will have touched oak and the newer the oak the higher the level the newer the oak and that is still true today in uh in the burgundy wines that you have there and then the

Last thing about burgundy and i will mention this because this is a thing because burgundy even i will admit to even to me it’s an intimidating region to get into it’s very producer centric and every producer has a personality and a style that they go on

And it’s one of those things where i said you know shopping online is so invaluable it’s incredibly invaluable with buried because turns out there are a lot of obsessed individuals who love burgundy and talk about all these producers so the producer might not talk about themselves but you can bet berghound

Tells you all about that producer the amount of oak they use the tasting notes of the last a decade of vintages and so you can find that information particularly about chardonnay french chardonnay which is predominantly burgundy that we’re talking about uh so there you go um we got any more fun questions coming

About what is uh what does the cara neon grape contribute to the blend as opposed to the more traditional more federic grape that’s a great question yeah that’s that’s specific so karen yen is it for the longest time it was considered a garbage grape because it made very light pale colored wines

That were had very little flavor and the reason for that is it’s very productive it’s a very productive grape variety and you could overcrop it and so all the power of the vine would go up into the grapes and it would make all because there were so many grapes

Being produced on a single vine they would just not have as much flavor and texture and power in them that being said remember i said the old vine thing happened when what happens with old vines is they become less productive with time like you just can’t run the marathon as

Much the older you get it’s harder to do so when they do run a marathon which is every vintage they only do as much as they can and they produce less and less and they put all the power of their vine into those grapes and so those are super

Concentrated and the flavors that i get is the long way of me saying it because this is how i do it is i get red fruit flavors predominantly we’re talking raspberries uh red cherry red cherries strawberries stewie fruits but in the red rum and then i also get a

Lot of meaty flavors so anywhere from like salami to hot dog depending on the wine i know hot dog sounds bad but i swear when you smell with these potpourri of red berries it actually smells really delicious and maybe that’s just a me thing i don’t know what’s your thought on

Meaty ones i love i love it i i i i’ve had wines that smelled like pepperoni pizza and i absolutely couldn’t get enough of it uh it was not for everybody but that’s kind of the key with wine oh oh somebody froze so i froze so we’re gonna

My camera leave me out here on my own man we’re switching out we have a backup cam because we thought this might happen my camera’s been kind of on the fritz uh but uh but karen yen also has it has tannin but not as much as more vet so

When you’re talking about these two different grapes more event has more color more red has more tannin more veg has more peppery flavors more that also has a lot of meaty flavors too um but carrion has meaty flavors it’s got more red fruit flavors it’s got less tannin

Also it does have tannin um but less tan and then more red and so those are the the differences that they’ll grab uh that they’ll add to the blend one thing i will say about in karinan’s favor of over more bed is morved has okay i i don’t know

I’m curious if anyone gets this experience too but when you taste the wine you taste the profile of the wine over time so how it hits your palate is one section so like is it big on the front of the palette or is it small and building and then you’ve got the mid

Palette and the mid palette is like it’s this section where it’s this section where uh you’ve got all of this stuff happening or maybe very little stuff happening depending on the line and then you have the finish how long is that finished and that kind of a thing so

When i tasted karen yen i find that palette to actually be pretty long in long in the tooth in a good way and um that’s one of the characteristics we look for when we’re tasting wine is that taste profile the start the middle and the end and maybe

The aftertaste after you swallow what that what that’s like how do how to buy burgundy follow the negotiation the village or the vintage i think like you said before it’s it’s a huge way it’s it’s about the producer itself uh jennifer hoe’s in the chat and she’s a huge berg fan jennifer

You like it’s like produce jennifer throw down some of your favorite producers right now in berg i know you’ve got a few that you love i want to see them this is why having friends who to talk about wine with is a good thing everyone’s got an opinion on something

She’s got she she has some good taste there that that one there uh vincent dancer is a great producer uh who else let jennifer answer this question i don’t need to answer it you don’t need to know my secrets yet delegate delegate um but the one thing about uh buying burgundy

Is you’re going to see a lot of negotiants there those are the readily available wines that everyone has now the thing about buying negotiants and burgundy is that you can taste high quality wines at a great value from a negocian so if you’re buying a leflev or or beverly uh george

Luis st george and luisa and george from who’s the guy who’s the major producer and then we say george somebody somebody tell me um someone let us know thank you jennifer merlot is totally delicious um these producers have higher level appellation so villager village and above above the

Lodge so premier crew and grand cru i would recommend if you’re going to get a negotiate wine look for those premier crew bottlings because it’s actually one of the best values you can find in premier crew okay so that’s my negotiate secret then the next thing is is producer now that

You’ve tasted a few premiere crews and you’ve got an understanding of what these different areas are like in burgundy because burgundy is expensive right we want to kind of dip our toes before we go deep so we’re going to taste villages around the areas to sort of get an idea and we might

Taste you can taste villages from negotiants and premier crews which tend to be at a better value and then you can start honing in on who’s the producer that i like for example i found out in this course that uh just watching christine talk about it that i love jivi chamber 10.

She described it in such a way and i know pinot noir well and i know burgundy and i was like that’s my jam that’s my baby i need more of that in my life so i actually went out and bought a shivering pretend to taste because i was

Like i need to verify that that’s true it was an expensive purchase but she described it in such a way i knew i knew i knew my heart of hearts that i was going to like this wine and i did thank god because it was expensive and

But but the interesting thing was that i was able to navigate my way to a producer and now i’m following that producer in burgundy and that’s kind of how you do burgundy is you start playing around do i even like pinot noir chardonnay from this region and you might not

And that’s okay like pinot noir from burgundy if you’ve been drinking burgundy from the central coast of california pinot noir from burgundy is gonna be like hey i’m drinking dirt yeah not the same it’s not the same it’s very different it’s a very different wine jennifer who i’ll be right over too drc

Is domain where money conti it’s a very small producer uh domain romani conte and they make a wine from a very very small uh area romani conte uh from uh von romine and von romane is one of those it’s kind of it’s we don’t even talk about it in the course because

If i tell you that von romany i’m telling you now you know now that you know von ramone is the most hard-to-get uh appellation in burgundy you can find it from some of these check out the negotiate uh you can taste bone ramune you can experience a

Taste of bone ramune but it’s it’s um there’s a few there’s a grand cruise there and the grand cruise they’re very expensive and and by expensive i mean compared to all the other wines in the world the amazing delicious wines um they can uh charge some of the highest prices around the

World even over uh delicious bordeaux prices this beautiful boy right here or gal this charming lady um so yeah okay i think we got time for one question left uh yeah yeah what do we got um oh what was your favorite part about creating the course from carol i love it uh this

During the ideation phase christine and i were talking about what it would be like to learn in a different way and we started throwing out all these ideas and how it would work and this like big picture started to come together about instead of just forcing you through here’s all the

Regions of the world we’re going to do them in sections and we’re going to break it down even further than that so that if you want to become an expert on i don’t know we can pick a region in france but why don’t we pick somewhere totally crazy

Like can canadian wines that in the future you should be able to be able to take something on canadian wines and actually learn a bit more about canadian wives and become confident in them and that is kind of where it came from is this idea that we’re no longer held by this core

You must know group of wines in you know regions to understand the world of wine you can explore everything and so that was the big thing for me was that it suddenly became more open and we were so excited about doing it and it was really great to hear christine because

She’s a mess she did the program she went through all she went through bit in analogy she’s a master of wine she’s an incredible master of wine and yet through all this education she’s still interested in pushing that education maybe in a different route so it was

Really exciting to have her on the team with me to put this together and i think you’re going to love her too so that’s my answer watching the two of you bounce off of each other um as you’ve been creating this that in and of itself has been uh an education in wine

Just the discussions y’all have been having and uh so i can i can speak from that end just it’s huge you guys have been very very thorough it’s fantastic uh yeah i uh we’ll post up the spelling on von romane so you i think there’s actually a dash in

Between those two letters monique if you post that up uh that’s she’s like now that they’ve told me the best way i’m just gonna go and buy it right it’s a good place that’s a start hey if you want to start from the top that’s fine too that’s okay

We do mention all the major appellations and all the other regions i just for whatever reason we didn’t mention bone romanese so i’m telling you now there you go it’s one of but i’m i’m a g-rich chamber 10 fan so what if you are gb chamber 10

Fan 2 you know they have a grand crew in sharm 10 in uh jeffrey chamber 10 as well which i think me personally is better than von romane putting it out there i’m just saying i’m just saying so just because everybody loves it doesn’t mean you’re gonna love it oh god that’s that’s

Probably one of the best lessons you can learn in the in in your education with wine is it’s okay it doesn’t matter if it’s everybody’s favorite if you don’t dig it that’s that’s all right too fine find this i guarantee you there’s something out there you like so just keep looking
