French macaron recipe, made from almond powder, egg whites and low on sugar, stuffed with delicious cream light lemon cream patisserie.
This delightful sweet can be made in less than 1 hour, and can be served for an entire week, fresh, moist, and crispy. By simply preparing the lemon curd and keeping it in the fridge.
The ingredients for our recipe are:
/ For the Macaron
150 gr of Almond powder *
*(for for store results, add Same amount of sugar here)
3 egg whites
125 gr of powdered sugar
1-2 drops of coloring
*Secrete ingredients (15gr of flour, 5gr of salt, 5 gr of baking powder)
Into a mixing bowl, we beat the egg whites on low -medium speed for several minutes, then increase the speed and slowly add the powdered sugar and beat another 2-3 minutes, finally adding the rest of the ingredients, mix by folding with a spatula, till we incorporate all the ingredients and we have a slightly runny texture.
Into a piping bag we place our mix and form onto a baking tray round base of macaron size. Then we tap down the baking tray several times and keep on the kitchen counter for 40-60minutes to form a hard film on top.
Into a preheated oven at 160C we bake for 15-17 minutes, then allow to cool down, remove and stuff with the Cream Patisserie, serve and enjoy.
/ For the filling, lemon cream patisserie
100 ml of fresh lemon juice
3 whole eggs
3 egg yokes
10 gr of vanilla sugar
125 gr of sugar
125 gr of butter
3 lemon zests
Into a bowl we add onto the eggs the sugars and we beat well, then we add the lemon zest.
Into a pan we heat the lemon and we add slowly to the egg batter, then we pour all the mix into the pan and stir constantly on medium heat for 3 minutes till it has thickened, then we add the butter and mix well and pour into a tray and allow to cool in the fridge.
