An Indian twist on the classic bruschetta!

Ingredients: I just eyeball everything
Cherry tomatoes, quartered
Mini bell pepper, diced
Red onion, diced
Garlic, minced
Cumin powder
Salt
Pepper
Olive oil
Lime juice
Red wine vinegar
Paneer or queso fresco, crumbled
Italian or French bread, sliced
Cilantro mint chutney
Cilantro

Let’s Make It:

1. In a medium bowl, toss together tomato, mini bell pepper, red onion, garlic, salt, pepper, cumin powder, chaat masala, lime juice, olive oil, red wine vinegar in a bowl and mix well.

2. Butter both sides of all the bread and toast to get it crispy and browned.

3. Heat some butter of ghee in a separate pan and add in crumbled paneer and cook on low heat until it’s slightly browned. If you use queso fresco, skip this step. Add the paneer or queso fresco to the tomato mixture and mix well.

4. To assemble, add a heaping amount of the tomato pickle mixture onto the bread, drizzle with a generous amount of cilantro mint chutney and fresh cilantro. Enjoy!
