* 1.2 kg (42Oz) of potatoes (suggestion: Maris Piper potatoes)
* 400ml (13.5Oz) of whole milk
* 400ml (13.5Oz) of double cream
* Some whole nutmeg (if unavailable: ground nutmeg)
* 5 garlic cloves
* 30g (1Oz) of butter
* Aromatic herbs: thyme and bay leaf
* Salt and pepper

PREPARATION: 20 minutes.
COOKING TIME: 1 hour.
