Welcome back to SOUP SEASON, my new series, where I show you how to make 10 of the best soups in town 🍂

For episode 1, we’re starting with a classic – FRENCH ONION SOUP 🇫🇷

It’s PERFECT for the colder days ahead – a bowl of sweet, sticky & gooey onions, topped with garlicky bread + oozy cheese 🥵

INGREDIENTS (serves 4)

1kg brown onions
5 garlic cloves
50g (vegan) butter
2tbsp olive oil
2tbsp plain flour
250ml white wine
1.5l vegetable stock
1tbsp sugar
Handful of fresh thyme
Handful of fresh rosemary
2 bay leaves
Salt
Pepper
1x baguette
1x block (vegan) cheese
Handful chives

METHOD

1. Slice the onions, then add the butter + oil in a deep-bottomed pan.
2. Add the onions, season with salt, mix well + sautée on a medium heat until softened (15-20 minutes – stirring regularly to avoid burning).
3. Add the sugar, then cook for a further 10-20 minutes until golden + soft.
4. Mince the garlic + sautée until fragrant.
5. Add the plain flour, stir well until incorporated
6. Increase the heat, then add the wine gradually to deglaze the pan, stirring well as you go.
7. Add the hot vegetable stock, rosemary, thyme + bay, then simmer for 30 minutes.
8. Slice the baguette + toast under the grill with a splash of oil / in toaster.
9. Ladle the soup into heatproof bowls, put the bread on top, then cover with grated cheese.
10. Place under the grill until melted, then top with finely chopped chives + enjoy!
